One of my favorite desserts to make when I’m going to a potluck or cookout, are bar cookies. They are easy to make and go a long way when you are feeding a crowd. But, I’ve also noticed sometimes that there is a lack of fruit at cookouts. So, I’ve combined delicious Butterscotch Almond Bars and fresh fruit and put them on skewers, which is always popular with the kids {and adults}.
I first spotted this recipe in a Betty Crocker Cookout from June 2002, the same one I found the Honey Lime Fruit Salad in. Since that recipe used macadamia nuts, and they are pretty expensive, I decided to use almonds. Even my non-butterscotch loving hubby thought they were great!
Combine Butterscotch Almond Bars and fresh fruit on skewers for a fun summertime dessert... recipe at HoosierHomemade.com.
Ingredients
- 3/4 cup butter {I use I Can’t Believe It’s Not Butter}
- 1 1/2 cups brown sugar, lightly packed
- 1 tablespoon vanilla
- 2 eggs
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1 cup butterscotch chips
- 1/2 cup almonds, coarsely chopped
Instructions
- Preheat oven to 350 degrees and grease the bottom and sides of a 13×9 pan.
- In large bowl, cream the butter and brown sugar until fluffy.
- Add the vanilla and eggs.
- Combine the flour and baking powder, gradually add to creamed mixture.
- Stir in chips and almonds.
- Spread evenly in pan.
- Bake for about 20-30 minutes, or until golden brown. Cool completely.
- Cut into squares, alternate on skewer with fresh fruit.
