Butterscotch Almond Bars: Memorial Day Food

One of my favorite desserts to make when I’m going to a potluck or cookout, are bar cookies. They are easy to make and go a long way when you are feeding a crowd. But, I’ve also noticed sometimes that there is a lack of fruit at cookouts. So, I’ve combined delicious Butterscotch Almond Bars and fresh fruit and put them on skewers, which is always popular with the kids {and adults}.

I first spotted this recipe in a Betty Crocker Cookout from June 2002, the same one I found the Honey Lime Fruit Salad in.  Since that recipe used macadamia nuts, and they are pretty expensive, I decided to use almonds. Even my non-butterscotch loving hubby thought they were great!

Cook Time: 30 minutes
Total Time: 30 minutes

Combine Butterscotch Almond Bars and fresh fruit on skewers for a fun summertime dessert... recipe at HoosierHomemade.com.

Ingredients

  • 3/4 cup butter {I use I Can’t Believe It’s Not Butter}
  • 1 1/2 cups brown sugar, lightly packed
  • 1 tablespoon vanilla
  • 2 eggs
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 cup butterscotch chips
  • 1/2 cup almonds, coarsely chopped

Instructions

  1. Preheat oven to 350 degrees and grease the bottom and sides of a 13×9 pan.
  2. In large bowl, cream the butter and brown sugar until fluffy.
  3. Add the vanilla and eggs.
  4. Combine the flour and baking powder, gradually add to creamed mixture.
  5. Stir in chips and almonds.
  6. Spread evenly in pan.
  7. Bake for about 20-30 minutes, or until golden brown. Cool completely.
  8. Cut into squares, alternate on skewer with fresh fruit.
