S’mores = Graham Crackers, Marshmallows and Chocolate…what could be better? I’m a bit obsessed with these three little ingredients, and honestly all the fabulous S’mores recipes! S’mores are my favorite Summertime treat – sitting around the fire, roasting marshmallows, does it get any better than this? Well, truth be told, I might just roast marshmallows on the stove too, but shh…don’t tell any one.

I remember as a young girl, heading to the Campground every weekend with my parents. They left our camper in a local Campground all Summer, and every weekend we would head there for fun and relaxing. Every Saturday night, there was a musician from the Chicago area that would come and play his music and we would all dance and enjoy the time together.

Life seemed so simple then. I often long for those easy days of Summer and the memories I hold dear from that time. Those evenings on the dance floor is where my Dad taught me how to Polka Dance, and where he received his “dance with a chair” title. Fun times!

This S’mores Ice Cream Pie reminds me of those easy days, of the hundreds and hundreds of S’mores that we enjoyed at the Campground with friends, and the love of pie that my Dad had.

S’mores Ice Cream Pie

Prep Time: 30 minutes
Total Time: 30 minutes

Delicious no bake treat with all the flavors of a S'more. Recipe from HoosierHomemade.com. Adapted from Frozen Delights Cookbook

Ingredients

  • 12 whole graham crackers or a store bought crust
  • 5 tablespoons butter, softened
  • 1/4 cup sugar
  • 1 container {1 1/2 qt} S'more Ice Cream
  • 1 container {1 1/2 qt} Chocolate Fudge Brownie Ice Cream
  • 1 cup Hot Fudge Sauce {homemade or store bought}
  • 1 cup Kraft Jet-Puffed Marshmallow Creme
  • Hershey's Chocolate Bars

Instructions

Crust

  1. Spray a 9 inch pie plate with non-stick cooking spray
  2. In a food processor, crush graham crackers until fine, add butter and sugar and pulse until crumbs are moistened
  3. Press into prepared pie plate, evenly on the bottom and sides
  4. Freeze for 30 minutes
  5. Soften S'more Ice Cream in the fridge for 30 minutes until slightly softened
  6. Pack softened ice cream into crust, spread evenly with a large spoon
  7. Freeze 15 minutes or until firm
  8. Put 2-3 tablespoons hot fudge sauce into a resealable bag and reserve for topping
  9. Heat remaining hot fudge slightly in the microwave, pour into a resealable bag, snip off the corner and pipe an even layer over ice cream and freeze.
  10. Spoon remaining S'more Ice Cream over Hot Fudge layer, spread evenly. Freeze 30 minutes
  11. Top with scoops of chocolate ice cream. Freeze at least 2 hours {or overnight}
  12. To serve, slightly heat hot fudge in microwave and pipe on top
  13. Slightly heat marshmallow creme, place in resealable bag and pipe on top
  14. Add Hershey chocolate bars
  15. Serve immediately. Store leftovers, wrapped in the freezer.

Notes

Prep time does not include freezing time. Allow 3-4 hours minimum for freezing, best if made the day before
