Chocolate Mint Brownies with a fluffy frosting. Recipe from HoosierHomemade,com
Ingredients
- Betty Crocker Fudge Brownie Mix
- Eggs, Oil and Water according to the box
- Hershey's Drops Candy
- Andes Creme de Menthe Baking Chips
- 1 cup Heavy Whipping Cream
- 1/4 cup International Delight Irish Creme Coffee Cream
- 1 cup Powdered Sugar
- Green food coloring
- Andes Creme de Menthe Chips {optional}
Irish Cream Mint Fluff
Instructions
- Mix brownies according to the directions on the box.
- Preheat oven to 350 degrees, line a 13x9 pan with foil and spray with cooking spray.
- Spread half of brownie mixture in the bottom.
- Place Hershey Drops Candy on top and sprinkle with Andes Chips.
- Cover with the remaining brownie mixture.
- Bake at 350 degrees for 35-40 minutes or until toothpick inserted comes out clean.
- Beat whipping cream until stiff.
- Add powdered sugar and Irish Creme Coffee Creamer. Beat until stiff peaks form.
- Stir in green food coloring.
- After brownies are cool, cut and frost with Irish Mint Fluff and sprinkle with Andes Chips.
- If you cut brownies with a plastic knife they cut cleanly and don’t flake as much.

I’m planning the St. Patrick’s Day party for my daughter’s class. I can’t wait to make the mint chocolate chip cookies ..they will be a hit with the kids! I found some cello candy bags from Box and Wrap that have shamrocks on the bags….so cute. It’s the extra special touches that make the party great. Thanks so much for the recipe.
