Christmas Cookies~Gingerbread Men~Day 8

What’s more fun than Gingerbread Men Cookies at Christmas time?

I have never made Gingerbread before, but wanted to give it a try so that I could add the cookies to my Gingerbread Cupcakes. The dough went together very easily and it rolled out very smooth.

Ingredients

  • 5 1/2 c. Flour
  • 1 t. Baking Soda
  • 1 1/2 t. Salt
  • 1 T. + 1 t. Ground Ginger
  • 1 T. + 1 t. Cinnamon
  • 1 1/2 t. Ground Cloves
  • 1 t. Nutmeg
  • 1 c. Butter, room temperature
  • 1 c. Brown Sugar
  • 2 Eggs
  • 1 1/2 c. Molasses

Directions:

Whisk together dry ingredients.

Cream butter and brown sugar until fluffy.

Add eggs and molasses, beat to combine.

Gradually add flour mixture. beat just until combined.

Divide dough into thirds, flatten each piece and wrap in plastic. Chill for at least 1 hour or overnight.

Roll out dough and cut into desired shapes.

 Bake at 350 degrees for 8-10 minutes.

Kitchen Tip: I measured the molasses in one of my favorite kitchen tools, the Pampered Chef Measure All. When measuring, Peanut Butter, Butter, Corn Syrup etc, the ingredients come out clean and you can see through the container to make sure that the ingredients don’t have any holes (air pockets).

I decorated the Gingerbread Men with Fluffy Vanilla Frosting and Mini M&M’s.

Ingredients for Fluffy Vanilla Frosting:

  • 1 1/2 c. Butter, room temperature
  • 4 c. Powdered Sugar
  • 1 t. Vanilla 
  • a splash of Milk  (the recipe didn’t call for this, but I thought it made the frosting smoother and easier to work with

Directions:

Cream Butter, gradually add sugar, then vanilla and a little milk.

  3. How fun! I have never made gingerbread men either. But, I have found memories of making them with my mom. Thanks for the idea. I think these will be on my “to do” list with Grace.
    We are all moved in and doing well. Had snow today, I am sure you did too. It was Grace’s first real snow, EVER!! We have fun and many pictures were taken!!
    I can’t wait to check out all the other cookies you have posted!

  4. These look super delicious:) I grew up never eating gingerbread because my parents didn’t like it. Not until I was twenty did I taste it’s delicious flavor. Now I’m hoooked:) I’m also so jealous that you have the little plunger measuring cup. I have been wanting one of those for a long time. Would you believe it that I have yet to see them here in NY…its’ like I live in the boondocks!
