Easy Berry Mini Cheesecakes

Last weekend while making some treats to take to a friend’s daughter’s graduation party, I searched Hoosier Homemade for the Mini Cheesecake recipe that I’ve made over the years, and quickly realized that I never shared it.

With Fourth of July right around the corner, I thought you might enjoy these Easy Berry Mini Cheesecakes to take to your Celebration!

The Mini Cheesecakes are simple, easy and can be topped with any fresh fruit, canned pie filling, or even chocolate. To make them festive, I added some whipping cream, a sliced strawberry and a couple blueberries.

Easy Berry Mini Cheesecakes

Make these quick but impressive desserts for your next party. Recipe from HoosierHomemade.com

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes
  • Yield: 6 dozen minis

Ingredients

  • 12-18 vanilla wafers, crushed
  • 2 packages {8 oz. each} cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Toppings: fresh fruit, whipping cream, canned pie filling, etc.

Instructions

  1. Fill a mini cupcake pan with liners, foil are best for these
  2. Preheat oven to 375 degrees
  3. Crush vanilla wafer in the food processor or resealable bag
  4. Add about 1/2 teaspoon of crushed wafers to each liner
  5. In a large bowl, beat the softened cream cheese until fluffy
  6. Add the rest of the ingredients and continue to beat until smooth
  7. Add about 1 tablespoon of cream cheese mixture on top of wafers
  8. Bake for about 15 minutes or until a toothpick inserted comes out clean
  9. Cool completely and add toppings
