Last week I posted a recipe for Chocolate Zucchini Cake. While that cake is really good, I’ll have to confess it’s not the recipe I usually use. You see, I had misplaced my usual recipe that I have used for years, and of course, couldn’t find it when it was time to bake the cake. A couple days later while looking for another recipe, there it was. Yeah! I was really excited and had to bake it right away and share the recipe with you.
I found this recipe many, many years ago in a newspaper column that is written by an Amish cook. While it is quite similiar to the first recipe I posted, this cake is much better. In fact, this cake disappeared, I ended up throwing some of the other cake out.
Ingredients:
3 Eggs
2 c. Sugar
1 c. Oil
1 T. Vanilla
1 t. Salt
1/4 t. Baking Powder
1 T. Cinnamon
2 t. Baking Soda
1 c. Nuts
4 T. Cocoa
2 c. Zucchini (I grate mine in the food processor)
2 c. Flour
Directions:
Mix all ingredients together and pour into a lightly greased 9 x 13 pan. Bake at 350 degrees about 1 hour or until a toothpick comes out clean.
Serve with a dollop of whipped cream.
Note: This cake is actually better the second and third days.

Love it. Most people can’t tell there is zucchini in it.

I made some zucchini chocolate-chip muffins that were just so-so. But I’m about to head out to the garden and see what grew during our week-long absence. I suspect I’ll see some zucchini, and now I know just what I’ll be doing with them!
I was wondering could u put a cream cheese frosting on the cake. I`ve never tried a chocolate one before.
Strangely enough, I’ve lost my favorite chocolate zucchini cake recipe too. I’ll have to try this one, it sure sounds like a winner!

This seems like a lot of sugar…can it be cut back to a cup+ a little more?
@linda, I suppose you could cut back a little, it’s not a sweet cake at all though. The zucchini absorbs the sugar.

My mother-in-law used to make a delicious chocolate zucchini cake that we all loved. She passed away a few years ago, and I definitely want to try this. It would be great to recreate some wonderful memories!
