Ham Leftover Recipes and Our Menu Plan

[donotprint]One of the best things about holidays is all the great food! Easter is over…now what are we going to do with all the leftovers? If you are looking for some new recipes, last year I hosted a Ham Leftover Linky Party. Another great thing, is being to cook once, and eat several meals from just one day of cooking.

Ham and Broccoli Quiche Recipe:

  • 1 pie crust (store-bought or homemade)
  • 1 1/2 cups ham, cubed
  • 1 1/2 cups Swiss cheese, shredded
  • 1 cup broccoli, chopped
  • 4 eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dry ground mustard (or regular mustard)

Preheat oven to 375 degrees, place pie crust in baking dish. Layer the ham, cheese and broccoli. In a separate bowl, beat the eggs and milk, then stir in remaining ingredients. Pour over broccoli. Bake for 30-45 minutes or until knife inserted in center, comes out clean. Let stand 5-10 minutes.

Serve with fresh fruit and a fruit smoothie for a complete breakfast or dinner!

Friday ~ Honey Lime Grilled Chicken {recipe from Mommy’s Kitchen}, Rice {never made last week}

Saturday ~ Special Grilled Cheese Sandwiches and Pasta Salad

Sunday ~ Lasagna, Garlic Bread, Salad
