Welcome to another great week of meals! Our menu plan went pretty well last week, with the exception of switching two of the days. One of the good things about menu planning, is when your day gets away from you, or your week is crazy, you can switch meals around and not make a trip through the drive-thru.
One of the meals that my family loves is appetizers. I usually make several and sometimes we add a Baked Potato Bar. Last week I made these Mini Taco Cups, they were perfect for our Appetizer Night, and will definitely be making an appearance at any upcoming Football Parties.
Setting the scoops on a mini muffin pan or large cookie sheet.
Scoops prepared with the taco meat
Ingredients
- Tostitos Scoops Chips
- 1 pound hamburger, cooked and drained
- 1 envelope taco seasoning plus water {according to package}
- 1 cup of Salsa
- 1 can Refried Beans
- Mexican Blend Shredded Cheese
- Sour Cream
- Green Onions
- Cilantro
Instructions
- Cook and drain hamburger, add taco seasoning and water, continue to cook taco meat. Add salsa and heat through, remove from heat.
- Set Scoops on a mini muffin pan or large cookie sheet. Using a butter knife, spread a small amount of beans into chip.
- Add a spoonful of taco meat
- Top with cheese. {this step is a little messy}
- Bake at 350 degrees for about 10 minutes or until cheese is completely melted.
- Top with Sour Cream, Green Onions, Cilantro or other toppings you like.

Monday – Breakfast; Homemade McGriddles and Fried Potatoes
Tuesday – Chicken N’ Noodles, Mashed Potatoes
Wednesday – Ravioli, Salad, Parmesan Knots
Thursday – Loaded Tostadas, Chips & Salsa
Friday – Sweet & Sour Chicken Kabobs {Eat at Home recipe}, Rice
Saturday – Shanghai Wings, Baked Potatoes
Sunday – Lasagne, Salad and Garlic Bread

my sister-in-law and i have been obsessively working on our super bowl menu for the last week (we love appetizers, so this is a lot of fun for us) and these were a definite addition to our menu! thanks for the idea! can’t wait for sunday, as i’m drooling just looking at your pictures…
last year, for the Super Bowl, we made ten new recipes, and this was the stand out… it’s the only one getting repeated this year (we love to try new things, so for something to get repeated is a HUGE deal.)
