With all of our boys out of the house this year, March Madness has kind of snuck up on me! I am not usually a big college basketball fan, but I do love to watch the tournament- it is fun to make a bracket and, of course, to make snacks! I feel like it is one of those events that brings people together.Mini Taco Cups

I usually make one new appetizer each year (always have to have my go to favorites!), and this year I tried out Mini Taco Cups. I ran to Walmart for inspiration and knew I could come up with a great Mexican dish with some Ro*Tel (my favorite easy way to pack a lot of flavor into a dish!),Rosarita Traditional Refried Beans, tortilla chips and cheese!

The Mini Taco Cups are full of flavor, easy to eat, and really satisfying! Doug says they are one of his favorite new recipes I’ve tried! I loved that they were filling enough to be dinner- a dinner of all appetizers is my favorite kind! You can eat these plain or dunk them in salsa or sour cream.

To start, brown your ground beef. Right before it is almost finished, add the undrained can of Ro*Tel. Then drain and add your taco seasoning!

Next, spread some Rosarita beans into the chips, and top with meat and cheese!Mini Taco Cups

10 minutes in the oven and your snack is ready! I love that these are bite sized – and you don’t even really need a plate! I am hoping to get all of my boys home for the Final Four- I know that they will love munching on these Mini Taco Cups and watching the game! Any excuse to get all of the home is a win in my book.

  • Tostitos Scoops Chips
  • 1 pound hamburger, cooked and drained
  • 2 tablespoons Homemade Taco Seasoning
  • 1 cup of Salsa
  • 1 can Refried Beans – you will use about ¼ of the can
  • 1 cup Mexican Blend Shredded Cheese
  • Toppings – sour cream, green onions and cilantro, optional


  1. Cook and drain hamburger, add taco seasoning and water, continue to cook taco meat. Add salsa and heat through, remove from heat.
  2. Set Scoops on a mini muffin pan or large cookie sheet. Using a butter knife, spread a small amount of beans into chip.
  3. Add a spoonful of taco meat
  4. Top with cheese. {this step is a little messy}
  5. Bake at 350 degrees for about 10 minutes or until cheese is completely melted.
  6. Top with Sour Cream, Green Onions, Cilantro or other toppings you like.
