Caramel Apple Cream Cheese Dessert

Growing up in the Midwest, dessert was always part of our meals, especially for Sunday dinner. My Mom would make a big meal, all the family would come, visit and often times end up playing cards around the dinner table until late. She was a wonderful cook and even better baker. I suppose I got my love of cooking and baking from her.
Even though she was a wonderful baker, the desserts were most of the time easy to put together, and often she would make some type of dessert that set up in the refrigerator. You know how easy those are, right?
Well today I have one of those fabulous refrigerated layered desserts for you. And let me tell you my friends, you need to run – RUN – to the store for the ingredients for this one. However, I must warn you – prepare it when you have someone to share it with or you may end of eating way more than what you should. Trust me on this!
This luscious recipe comes from an old church cookbook of mine, so you know it’s delicious. There has never been a recipe that I made from this cookbook that we didn’t absolutely love.
I did change the recipe a bit to suit the season, but I will put the variations in the recipe below.
The crust is super easy with only 3 ingredients – ginger snap cookies, sugar and butter. Depending on the time of year and the flavor you want, you can also use graham cracker crumbs. Then that mixture is pressed into a 13×9 pan.
Then the fluffy, creamy filling is mixed with only 5 ingredients – cream cheese, powered sugar, whipped topping, crushed pineapple and mini marshmallows.
And into the refrigerator it goes for a couple hours or overnight to set up. It’s that easy.
Now, since we are still in the Fall season, with Thanksgiving right around the corner, I added Lucky Leaf Caramel Apple Pie Filling.
However, I think this dessert would be perfect for any occasion. Add Cherry Pie Filling for the holidays or a birthday, Blueberry for a Fourth of July dessert, Peach for Summer, or Mixed Berry. The options are incredible, there are 30 varieties to choose from.

Ingredients
Crust:
- 2 cups crushed ginger snap cookies or graham cracker crumbs
- 1?2 cup sugar
- 1?2 cup butter, melted
Filling:
- 1 cup powdered sugar
- 1 (8 oz) pkg cream cheese, softened
- 1 (15 oz) can crushed pineapple, drained well
- 1 (8 oz) tub whipped topping
- 1 cup mini marshmallows
Topping:
- 2 cans Lucky Leaf Caramel Apple Pie Filling or other flavor
Instructions
Crust:
- Melt butter
- Crush cookies and add to large bowl, add butter and sugar
- Press into 13x9 inch pan
Filling:
- Cream together cream cheese and powdered sugar until smooth
- Fold in pineapple, marshmallows, and whipped topping
- Spread over crust
- Place in refrigerator at least 2 hours or until set
- To serve – add caramel apple pie filling
- Store leftovers in refrigerator
