The chicken can be cooked and stored in the refrigerator for several days so you don’t have to make the burrito bowls the same day.

Protein: Don’t want chicken? That’s okay! You can substitute whatever protein you like such as ground turkey or steak!

Toppings: You’re also not limited to our list of toppings! Shredded cheese, sliced jalapeno peppers, sour cream, and queso are some more suggestions. Anything you would put on a burrito can be added to these burrito bowls. There’s no wrong way to do it.

Ingredients Needed to Make These Burrito Bowls

Chicken:

  • Skinless boneless chicken breasts – These are nice and lean and easy to work with
  • Olive or avocado oil – Either of these healthy oils works great for cooking
  • Fresh lime juice – This adds freshness and tang to the chicken
  • Chili powder
  • Garlic powder
  • Ground cumin
  • Paprika
  • Onion powder
  • Kosher salt
  • Black pepper
  • Cayenne pepper  – Add a little extra for more kick or leave it out for a milder flavor

For the Bowls:

  • White or Brown Rice – Cook this separately as a base for the burrito bowl
  • Lettuce
  • Black beans
  • Fiesta Corn
  • Red onion – Diced
  • Salsa 
  • Pico de Gallo
  • Tomatoes – Diced
  • Avocado – Sliced or mashed
  • Bell Peppers – Chop and cook with the chicken
  • Cilantro – For Flavor and color
  • Limes – A squeeze of the juice is a great garnish 

For the Dressing:

  • Greek yogurt or mayonnaise  – To make it nice and creamy
  • Fresh lime juice – A bit of citrus brightens up any dressing

How to Make the Burrito Bowls

  1. Whisk together the olive oil, lime juice, and seasonings for the chicken in a medium bowl. Add the chicken and toss to coat.
  2. Heat a heavy skillet to medium heat and drizzle some olive oil. Cook the chicken for 10-15 minutes, flipping occasionally. It must be cooked to an internal temperature of 165 degrees F. This is also the time to add your bell peppers if you are planning to use them.
  3. Cook your rice according to the package directions while the chicken is cooking. You can also use a Rice Cooker to make the process super easy.
  4. Remove the chicken once it is cooked through and place it on a cutting board to rest.
  5. Any veggies like tomatoes and red onions should be cut at this point. Drain and rinse black beans if needed.
  6. Slice or dice your chicken, whatever you prefer.
  7. Whisk together all of your dressing ingredients in a small bowl.
  8. Assemble your burrito bowl with your toppings of choice and dig in!

How to Store Leftovers

If you have leftovers, you can put them in a airtight container and keep them in the fridge for 3-5 days. The rice and chicken can be stored together, but the toppings and extra dressing should be kept separately. You can portion out the rice and chicken for meal prep and include small containers for toppings and the dressing. Reheat the chicken and rice in the microwave for about 2 minutes before serving.

  • Chicken
  • 1 pound skinless boneless chicken breasts
  • 3 tablespoons olive or avocado oil
  • 2 teaspoons fresh lime juice
  • 2 teaspoons chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ½ teaspoons paprika
  • ½ teaspoon onion powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper or more if you like
  • Bowl
  • White or Brown Rice, cooked
  • Lettuce
  • Black beans
  • Fiesta Corn
  • Red onion
  • Salsa
  • Pico de Gallo

  • ½ cup Greek yogurt or mayonnaise
  • 3 tablespoons fresh lime juice
  • ¼ teaspoon chili powder
  • ¼ teaspoon ground cumin
  • 1 teaspoon taco or hot sauce

Instructions

    1. In a medium bowl, whisk together olive oil, lime juice and seasonings for chicken
    2. Add chicken and turn to coat
    3. Add a drizzle of olive oil to a heavy skillet, cook chicken over medium heat 10-15 minutes turning several times, or until internal temperature reaches 165 degrees F
    4. Remove to cutting board and let rest
    5. While the chicken is cooking, cook the rice according to package directions
    6. Cut vegetables, drain and rinse black beans
    7. Slice or dice chicken 
    8. Assemble burrito bowl with toppings of your choice 

    Dressing

    1. In a small bowl, whisk together all ingredients until smooth

    Notes

    Peppers - clean and slice peppers, cook with chicken until tender
