Superman Ice Cream Cupcakes in a Jar: Cupcake Tuesday

It’s funny how some cupcakes evolve. When we were discussing the Ice Cream inspired cupcakes, Doug insisted that I do Superman Cupcakes. Growing up, and still today, Superman Ice Cream is Doug’s favorite flavor. If you aren’t familiar with Superman Ice Cream, it has 3 flavors combined together…Blue Moon or Blueberry, Strawberry or Cherry, and Tutti-Fruitti which is yellow.
I had the cupcakes planned, and then along came the Picnic Series, I thought it would be fun to combine the two. I baked these cupcakes in small mason jars with lids and rings, making them super easy to pack in a picnic.
Superman Ice Cream Cupcakes in a Jar
Bake some Superman Cupcakes in a Jar with this recipe from HoosierHomemade.com.
Ingredients
- White cake mix plus ingredients
- Strawberry cake mix plus ingredients
- Blueberry flavoring {available near the cake decorating supplies or here }
- Tutti-fruitti flavoring {available near the cake decorating supplies or here }
- Red, Blue and Yellow coloring
- Buttercream frosting
- Sprinkles or Jimmies
- Small Mason Jars {I found them at Walmart, they are in the housewares area with the other canning jars and supplies}
Instructions
- Mix white cake mix according to the box and set aside. Mix strawberry cake mix according to the box and set aside.
- Divide white batter in half. To half of batter add blueberry flavoring and blue coloring to batter until you get desired flavor and color.
- To the other half, add tutti-fruitti flavoring and yellow coloring.
- Preheat oven to 350 degrees, slightly spray the inside of the jars.
- Spoon batter into jars, adding a spoonful of each color on the bottom, and then alternating the flavors until the jar is about 2/3 full.
- Bake for about 20 minutes or until a toothpick inserted in the middle comes out clean. Cool completely.
- Fit a decorator bag with a #12 round tip, fill with buttercream and pipe on. Add some colorful sprinkles if you want.
- Add the lids and rings and pack in your picnic.
I love the idea of these little Cupcakes in a Jar! Last year I host a Cupcake Decorating Party and used them for take home favors. The ideas are endless!

What size mason jars? Small covers a lot of different choices. Is it 4 ounce, smaller ? Larger ?
Hi Lynda, 4 oz is fine. The jars that I used were a different shape, kind of wide and squatty. But 4 oz will work just fine. Just fill the jar – whatever the size – about 2/3 full or the same amount you typically do for a regular size cupcake.

Love all the picnic recipes! Using it for a family beach day tmrw. I just wanted to share one little thing with you blue moon ice cream is nutmeg flavored. I know it is hard to believe but it is. My guess is that “nutmeg ice cream” would not be on the top of most people’s list, especially kids, but a little blue coloring and a cute name like “blue moon” and it becomes an instant favorite. Thanks again for ALL the great ideas!!

Do you just stick the jars on the oven rack? or do you place them on a cookie sheet then the oven?
Hi Courtney, You can do either depending on your racks in the oven and how far apart the bars are spaced. It will work either way.

I love this idea. I ordered the flavorings from amazon and cant wait to try them. I think they would be a great gift for a ladies summer luau that my church is planning. How long do they last in the jars? I would need to make them in advance as I would need 100. I love your blog with all the nifty ideas and great pics.

The cupcakes should last about a week in the fridge. I wouldn’t add the frosting until the day you are using them though. Sounds like a fun party.

Everyone is right! Your superman cupcakes in the jar are JUST TOO CUTE!! I can’t wait to make them. I am always sending cupcakes to my son in college, and these will ship perfectly. I also loved superman ice cream when I was a kid. Brings back great memories! Thanks for a great post.
