Citrus Cookies: Picnic Food

Now it’s time for my favorite part of the Picnic…dessert! These Citrus Cookies are light, buttery and a fresh taste.  I added lemon and orange, but you could certainly use whatever flavor you like best.

Citrus Cookies


  • 1/2 cup Butter, softened {I use I Can’t Believe It’s Not Butter}
  • 1/4 cup Sugar
  • 1 Egg Yolk
  • 1 teaspoon Vanilla
  • 1 1/4 cup Flour
  • 1/4 teaspoon Salt
  • 1 teaspoon lemon zest, finely chopped
  • 2-3 tablespoons fresh lemon juice
  • 1 teaspoon orange zest, finely chopped
  • 2-3 tablespoons fresh orange juice
  • Powdered Sugar for dusting


  1. Preheat oven to 325 degrees. Combine butter, sugar, egg yolk and vanilla in large bowl, beat until well mixed. Add flour and salt, beat well.
  2. Divide dough in half. Add lemon juice and zest to one half of dough. Add orange juice and zest to the other half.
  3. Shape dough into 1 inch balls. Place on greased or parchment paper lined cookie sheet. Bake for 12 – 15 minutes or until lightly golden. Remove from cookie sheets and let cool.
  4. Dust with Powdered Sugar if desired.
