Mini Peanut Butter Cookie Sandwiches

Sometimes life gets busy…okay lets face it my friends, almost every day, life is busy! But just because it’s crazy around us, doesn’t mean we need to sacrifice treating our families to a special dessert. We just have to make the dessert quick and easy. These Mini Peanut Butter Cookie Sandwiches are a perfect treat for after school.

Made with Betty Crocker Peanut Butter Cookie Mix and decorated with Betty Crocker Cupcake Icing and sprinkles from Cake Mate, they are a snap to put together.

The Mini size are perfect for little hands, and a good portion control for us Moms who can’t stop eating them! I used a cookie dough scoop {2 tablespoons} and divided each ball in half, them rolled the dough, dipped in sugar and baked.

After the cookies are cooled, pipe on frosting, then roll in sprinkles. I find it easiest to pour the sprinkles onto a paper plate, then any sprinkles that are left, can be poured back into the jar. The decorating supplies are endless. Betty Crocker has Cupcake Icing that comes in a can like whipped cream, it’s so fun to use and of course, super easy too! There is Cookie Icing, Gel Writers, Icing Writers, tons and tons of sprinkles and the list goes on!

Finish off this fun after school treat with a Milk Shot! To add the sprinkles around the rim, dip the edge in water and then in sprinkles. It’s just fun!!

If you happen to have any cookies left, be sure to share with the Teacher! Simply stack the cookies in a mason jar, add a little fabric, ribbon and a card telling them how much you appreciate them!

Mini Peanut Butter Cookie Sandwiches

Quick and easy treat. Recipe from HoosierHomemade.com

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: 20 minutes


  • 1 pouch Betty Crocker Peanut Butter Cookie Mix
  • Water, Oil and Egg – according to directions on package
  • Sugar for dipping cookie dough
  • 1 can Betty Crocker Cupcake icing
  • Sprinkles


  1. In a medium bowl, combine cookie mix with water, oil and egg.
  2. Preheat oven to 350 degrees and spray cookie sheet with non-stick cooking spray
  3. Form balls with an ice cream scoop or spoon, roll in sugar to coat and place on cookie sheet
  4. Bake for about 10 minutes or until slightly golden brown
  5. Cool completely
  6. Pipe frosting onto the bottom of a cookie, top with another, roll in sprinkles

Welcome to Cupcake Tuesday! I’m so glad to have you! If you are new, you can find all my cupcake designs and recipes on the Cupcake Heaven page.

I just LOVE Valentine’s Day…next to Christmas, it’s my favorite holiday to bake for. The options are endless, from quick and easy to difficult and time consuming. You all know I love to create impressive looking desserts, that are easy and don’t take lots of time.

These Valentine Cupcakes are exactly that! Impressive looking {I think} but quick and easy!

Won’t your sweetie be so impressed when you bake these to finish off your romantic dinner together?!

Back in August, I told you about my trip to the Betty Crocker Test Kitchens. Every once in awhile they surprise me with a little package in the mail, and last week I received a few of their new desserts.

I used the Decadent Supreme Cake Mix, it’s a chocolate cake mix with chocolate mousse. Here’s what you will need…


Valentine Cupcakes

Chocolate and cherry cupcakes for Valentine’s Day from HoosierHomemade.com



  • Betty Crocker Decadent Supreme Cake Mix {or other chocolate cake mix}
  • Eggs, Buttermilk and Butter {learn how I make a cake mix taste like it’s from scratch }
  • Chocolate Mousse packet plus milk {comes with the cake mix}
  • Maraschino Cherry Filling {recipe below}


  • Maraschino cherries {10 oz jar} chopped
  • 1/2 cup maraschino cherry juice
  • 2 tablespoons corn starch
  • 1/3 cup sugar
  • 1 tablespoon butter {I used I Can’t Believe It’s Not Butter}



  1. Mix cake according to directions on the box. I baked them at 350 degrees for about 10 minutes, either check with a toothpick to make sure they are done, or by touching and make sure they spring back.
  2. After they cooled completely, I used a butter knife and gently released the cake from the side of the cup.
  3. Make the Chocolate Mousse according to the directions on the box.
  4. Put the mousse in the fridge while you are making the cherry filling.


  1. Drain the cherries, you will use all the juice, chop the cherries. {I chopped them pretty fine because I wanted them smaller for the cupcakes}
  2. In a small saucepan, combine the sugar and corn starch, gradually add the juice, cook and stir until the sugar is dissolved.
  3. Add the chopped cherries.
  4. Heat until boiling, cook until mixture is thick, remove from heat and add the butter.
  5. Cool completely. {I stuck mine in the fridge because I was in a hurry}


  1. Turn cupcakes over so that the bottom is up. {you can use either side, I just thought the bottom had better shape}
  2. Add a heaping teaspoon of mousse and then a small amount of cherry filling.

I baked mine in these cute little Heart shaped Silicone Baking Cups from Wilton.

I typically buy cherry pie filling, but I recently saw this recipe on Barbara Bakes. If you love to bake {of course you know I do}, you MUST pay her a visit! She has amazing recipes!

Here is another yummy option in case you don’t have the Heart Shaped Silicone Baking Cups…

Bake cupcakes in regular liners, remove from liner, slice in half, fill with mousse, top with cupcake. Add more mousse and cherry filling.

Lemon Cream Crepes and our Menu Plan

I’ve told you about my trip to the Betty Crocker headquarters, and how I baked in their test kitchens. It was truly one of the most amazing opportunities ever!

Today I have another yummy recipe for you, Lemon Cream Crepes. I had never made crepes before, mostly because I didn’t have the right size pan. While doing a little shopping last Friday, for our Anniversary, Doug and I found an 8 inch pan, just perfect to make crepes.


Lemon Cream Crepes

Lemon Cream Crepe recipe using Bisquick mix on HoosierHomemade.com.



  • 1/2 cup Original Bisquick Mix
  • 1 tablespoon sugar
  • 1/2 cup milk
  • 1 tablespoon butter, melted
  • 2 eggs


  • 2 cups sour cream
  • 1/2 cup milk
  • 1 tablespoon grated lemon peel
  • 1/4 cup fresh lemon juice
  • 1 box (4 serving size) vanilla instant pudding and pie filling mix
  • 2 cups fresh raspberries or other fruit
  • Powdered sugar
  • Additional raspberries, if desired


  1. In a small bowl, beat Bisquick mix, sugar, 1/2 cup milk, melted butter, and eggs with whisk or fork until blended.
  2. Grease small nonstick skillet with shortening or cooking spray, heat over medium heat until bubbly.
  3. For each crepe, pour 2 tablespoon batter into skillet; immediately rotate skillet until batter covers bottom.
  4. Cook until golden brown on bottom side.
  5. Run wide spatula around edge to loosen, turn and cook other side until golden brown.
  6. In a small bowl, beat sour cream, 1/2 cup milk, lemon peel and lemon juice, and pudding mix with whisk or fork until well blended.
  7. To assemble each crepe, spoon about 1/4 cup of filling on one end of crepe, top with raspberries, roll up and sprinkle with powdered sugar, serve with additional raspberries, if desired.
