Sausage Breakfast Casserole
This Sausage Breakfast Casserole is great for a weekend breakfast, brunch, dinner and to give as a Hostess Gift too! It goes together quickly with only a handful of ingredients you probably have in your refrigerator. And it’s make ahead, so you can put it together the day before, pull it from the fridge, bake and serve.
Not only does this Sausage Breakfast Casserole Recipe taste delicious, it’s super easy to put together. Just a quick whisk of the eggs and milk, a little mustard and salt for seasoning and it’s ready for the sausage, cheese and bread.
Cover and pop it into the fridge overnight and it’s ready to be baked the next morning! Add a fruit salad, Cranberry Coffee Cake, Cinnamon Vanilla Granola to add to yogurt, and you have the perfect breakfast for a holiday, brunch or even dinner.
This Breakfast Casserole is super versatile too, you can add or subtract ingredients that you like – want more cheese, add a little more – love bacon, add some cooked bacon.
With only seven ingredients and about 10 minutes, you can have this easy Sausage Breakfast Casserole ready to bake or put in the refrigerator overnight. You will need –
Sausage Breakfast Casserole Ingredients
- Sausage – a mild breakfast sausage is best, but really anything you like works fine
- Bread – I used Gluten Free bread, whatever you like best will work
- Cheese – grated, your favorite – I used a triple cheddar blend
- Eggs
- Milk
- Mustard
- Salt
How to make Sausage Casserole
- Cut the bread into small cubes
- Add eggs to large bowl and whisk
- Add milk
- Add mustard and salt and whisk
- Add bread cubes
- Add cooked sausage and cheese
- Stir together until well combined
- Add to 13×9 baking pan – if you are giving this as a gift, add to an aluminum pan with a lid
Then off to the oven is goes to be baked or wrap and place in refrigerator overnight. To bake in the morning, pull it from the fridge at least 30 minutes before you begin baking.
It will take about 40-45 minutes to bake, so allow time for the breakfast casserole to come to room temperature.
Now of course the holidays are a perfect time to enjoy this casserole. But really, it’s perfect anytime of year. You could even whip it up in the morning, place it in the fridge and have dinner ready for you!

Sausage Breakfast Casserole
A perfect make-ahead breakfast casserole for the holidays, brunch, dinner or give as a gift!
Ingredients
- 1 pound breakfast sausage, cooked and drained
- 6 eggs
- 2 cups milk
- 1 teaspoon mustard
- 1 teaspoon salt
- 6 slices of white bread, cubed
- 1 cup of cheddar cheese, grated
Instructions
Cook and drain sausage, set aside.
In a large bowl, beat eggs, add the milk, salt and mustard.
Stir in the bread cubes, cheese and cooked sausage.
Pour into baking pan (13×9)
Cover and place in fridge for 8 hours or overnight.
Remove from fridge 30 minutes before baking.
Bake uncovered at 350 degrees for 40 minutes of until knife inserted comes out clean.
Notes
This casserole makes the perfect Hostess Gift! Add mixture to foil pan with lid, tie it up with a ribbon and attach a card with cooking instructions.
