Rainbow Ice Cream is perfect for a birthday celebration, a St. Patrick’s Day treat, Baby Shower or really any special occasion. It only takes 2 ingredients – vanilla ice cream and Jell-O.

You will need to plan ahead to make this Rainbow Treat, but it’s super easy and fun to make, the kids can even help with it too.

Rainbow Ice Cream

  1. Remove Ice Cream from the freezer and soften for 10 – 15 minutes.
  2. Sprinkle 2-3 tablespoons DRY Grape Jello in a plastic container
  3. Divide Ice Cream into 5 equal parts, spread ice cream over jello {it’s okay if the ice cream is lumpy, I used a spoon that I ran under hot water to help spread it}
  4. Repeat with remaining DRY Jell-O and ice cream
  5. Cover and place in freezer overnight or several hours

Rainbow Ice Cream

Run hot water on outside of container to loosen Ice Cream, and turn out onto wax paper lined cookie sheet or leave in the container and serve from it.
