Classic Red Potato Salad and Our Menu Plan

Happy Monday! Did you enjoy your weekend? I had an amazing time at the Evo Conference! I hung out with Gina, Shelley from How Does She and Melissa from The Inspired Room, a HUGE Thank You to Apartment Guide for sending me! I learned a ton, met LOTS of great people and ate lots of great food, especially from Bush Beans and Pepperidge Farm! {more on that later}

Summertime is full of grilling and quick salads. Adding flavor to your Summer salads is not only quick and easy, but especially flavorful with Nakano Seasoned Rice Vinegars. This Classic Red Potato Salad from Nakano pairs perfectly with your grilled meat or fancy enough to take to a potluck or party.

I would have never thought about adding Seasoned Rice Vinegar to Potato Salad, but it turned out great.

Classic Red Potato Salad Recipe

Ingredients

  • 1-1/2 pounds unpeeled red potatoes
  • 1/2 small red onion, finely chopped
  • 1/4 cup NAKANO Seasoned Rice Vinegar Original
  • 3 tablespoons olive oil
  • 2 hard-cooked eggs, finely chopped
  • 1/3 cup packed cilantro leaves, chopped {optional, I left this out}
  • 2 tablespoons mayonnaise

Instructions

  1. Bring water to a boil on the stovetop. Cut potatoes into small chunks and boil about 8 minutes or until tender. Drain.
  2. While the potatoes are cooking,combine onion, rice vinegar, oil, 3/4 teaspoon salt, and 1/4 teaspoon pepper in a large bowl.
  3. Add hot, cooked potatoes; toss to coat.
  4. Cover and chill.
  5. Gently stir in eggs, cilantro and mayonnaise.
  6. Store leftovers in fridge.

Nakano makes several Seasoned Rice Vinegars that would be great on your next Summer Salad. The Basil & Oregano would be great in the Three Bean Salad, Roasted Garlic for these Chicken Lettuce Bundles or maybe Italian Herb drizzled over Cherry Tomatoes.
