Strawberry Shortcake Ice Cream Bar Cupcakes: Cupcake Tuesday

Today I’m sharing Strawberry Shortcake Ice Cream Bar Cupcakes {whew, that’s a mouthful}! When I was coming up with some ideas for the Ice Cream Truck series, I knew I wanted to share these. When I was pregnant with Nick, our 17 year old, I craved these Ice Cream Bars. I would eat at least a couple a day! I have not so fond memories of the night I went into labor after eating one, but I won’t bore you with the details.
Strawberry Shortcake Ice Cream Bar Cupcakes Recipe
A fun twist on a classic Ice Cream Bar. Recipe from HoosierHomemade.com
Ingredients
- White cupcakes
- 1 small box instant vanilla pudding
- 2 cups cold milk {for pudding}
- Strawberry syrup {like Nesquick}
- No-Taste Red Coloring
- Buttercream or Decorator Icing
- 2 cups Rice Krispies
- 1 small box of strawberry jello
Instructions
- Bake and cool cupcakes.
- While the cupcakes are cooling, mix the pudding and milk and put in fridge for at least 5 minutes.
- Stir in Strawberry Syrup, I didn’t measure, but added about 1/4 cup, squeezing in a little at a time.
- Stir in a little red coloring until you get the desired color.
- Place back in fridge.
- Bring 1 cup of water to a boil in the microwave and add the strawberry jello.
- Pour the jello over 1 cup of rice krispies, mix very well. Spread out evenly onto a piece of wax paper, and let dry while you prepare the cupcakes.
- After the cupcakes are cooled, use an apple corer to remove a plug for the pudding.
- Fill with pudding and add the top half of the plug back into the cupcake. Place in fridge.
- Chop Rice Krispies in food processor. I chopped the 2 colors seperately. The red Rice Krispies took a little more time to chop.
- After both are chopped, stir together well.
- Frost cupcakes, and dip cupcake in Rice Krispie mixture. Sprinkle more on top if necessary.

I was also having issues with the first batch of the jello/crispies I tried. I made another batch, did 1 cup of crispies and poured a tiny bit of jello over them and stirred. I add jello little by little to make sure my crispies only got a strawberry coating and but also stayed crunchy. Second batch turned out much better. Jello must be hot and only pour a very small amount of jello over the crispies, I think that is key!

I had the exact same problem as Carol. I followed the instructions word for word. There’s no way that the rice crispies will dry in 5-10 minutes. They do get very soggy. Maybe if you pour less liquid over them. I’ve been through 2 boxes of jello trying to get it right. I tried drying them out in the oven on 200 degrees and the door slightly open. It’s just a big sticky disaster.

I put 1 cup water in a glass bowl, heated it to a boil, then I added the jello, mixed until desolved, then I pour it over 1 cup of rice crispy,and mixed. I put wax paper in a cookies sheet. When I pour the mixture into the pan it was still liquid and set up just like jello does. Don’t know what I am doing wrong.
Seems like you are doing everything right. I’m sorry you are having trouble.
Maybe let the jello set up some. You might also look for strawberry rice krispies, I’m not sure if they are still on the market or not.

Do you let the jelly cool & almost set? How long do they take to dry after you mix with the Jello??

The rice krispies don’t get soggy, they do puff up some, but when you spread them out onto the sheet to dry and crisp up. They should dry in 5 or 10 minutes.

I just tried to make these. The strawberry rice crispy came out like jelly. When you pour the jello over thr rice crispys do you drain them before you but them on the wax paper or just dump it all on?
You should not have to drain them, how much liquid was there?
I tried making these and the 1 cup of liquid to 1 cup of the light and fluffy rice crispies made a huge soggy mess that did not dry out, had to dump after 2 hours?! Could you make a tutorial? I’m curious how you got so much liquid to dry out.
