Neapolitan Cupcakes: Cupcake Tuesday

Since we have a little break here before the next holiday, I thought it would be fun to run a short series inspired by Ice Cream flavors. We are kicking off the series with Neapolitan Cupcakes. I have seen these made a lot around blogland, but I changed them up a bit and put my spin on them.

Neapolitan Cupcakes

Total Time: 15 minutes

Neapolitan Cupcakes recipe from HoosierHomemade.com

Ingredients

  • 1 Chocolate Cake Mix plus ingredients
  • 1 Strawberry Cake Mix plus ingredients
  • 1 Vanilla Cake Mix plus ingredients
  • 2 cups Heavy Whipping Cream
  • Chocolate Sprinkles
  • Fresh Strawberries

Instructions

Cupcakes

  1. Place cupcake liners in pan and set aside.
  2. Mix all cake mixes in separate bowls.
  3. Spoon batter into ziploc baggies, seal closed.
  4. Grab someone to help you {trust me, it’s easier that way}, snip off a corner of the baggie, and fill liners with all 3 flavors at the same time. I made these just like the Mardi Gras Cupcakes , head on over there for details.
  5. Bake at 350 degrees for about 12-15 minutes or until a toothpick inserted in the middle comes out clean.
  6. Let cool completely.

Frosting

  1. Beat heavy whipping cream in a large bowl. You can sweetened it with a little powdered sugar and vanilla if you like.
  2. Chop strawberries finely and fold into whipping cream.
  3. Place whipping cream in decorator bag fitted with a giant round tip.
  4. Pipe on frosting, add some chocolate sprinkles and a fresh strawberry for garnish.

Even though I’m a big chocolate fan when it comes to ice cream, Neapolitan Ice Cream has always reminded me of Summertime and going to the local Ice Cream Shop. There is something about blending the three flavors…Chocolate, Strawberry and Vanilla that is nostalgic.

    I made these today as class snack. Everyone loved them. They were fun to make, looked great, and were delicious. I opted to cut the strawberry garnish in half. Thank you for this. I am putting this on my new list of what I can do.

  6. These Neapolitan Cupcakes look great! They do remind me of being a kid again having that Neapolitan Ice Cream! I loved that they are topped with a strawberry…Yum!
