We are finishing up the Ice Cream Truck Cupcakes this week. Look for some fun printables in the Cupcake Chronicles Newsletter on Friday from The Paper Cupcake! I hope you have enjoyed the mini series and had time to bake one or two of the cupcakes.

Last year I created some fun Snow Cone Cupcakes, so when I saw the Ice Cream Truck Snow Cones, I knew exactly what to do. I changed the color of the sugar sprinkles and the flavor of the cupcakes.

I found the Snow Cone cups at Walmart last year, but also saw them this year. I tried baking them in the cups, like I did for the Drumstick Cupcakes but there is wax on them that just didn’t do well in the oven. I discovered that if you bake a regular size cupcake, but fill it almost full, it will fit inside of the snow cone cup, making it a lot easier to decorate as well.

After baking the cupcakes {recipe below}, frost the cupcakes mounding the frosting in the middle. Then using cardstock or stiff paper, cut some dividers. Dip the edges of the cupcake in the colored sugar first, then place the dividers on the frosting and carefully add the other colors. Place the cupcake in the snow cone wrapper add a straw and you are done.

Snow Cone Cupcakes: Tutti-Frutti Flavored

Ingredients

  • 1 white cake mix plus ingredients to make it {oil, eggs and buttermilk}
  • 1 small box {3 oz} Tropical Fusion Jell-O

Instructions

  1. Preheat oven to 350 degrees
  2. Add paper liners to a muffin pan
  3. Mix all ingredients together with an electric mixer for about 2 minutes
  4. Fill liners almost full {to make a large mounded cupcake that will fit in the Snow Cone Wrapper}
  5. Bake for about 15 minutes or until a toothpick inserted comes out clean
