Pumpkin Cupcakes ~ Cupcake Tuesday
With all the talk about pumpkin lately and all the great pumpkin desserts being posted, I just had to show you these Pumpkin Cupcakes.

I was inspired by the Betty Crocker Pumpkin Cupcakes, and gave them my own little twist.
Ingredients for cupcakes
- 1 Yellow Cake Mix (or make homemade)
- 1 c. Canned Pumpkin (not pie filling)
- 4 Eggs
- 1/2 c. Water
- 1/3 c. Oil (I used applesauce)
- 1 1/2 t. Pumpkin Pie Spice
Directions
In large bowl beat all cupcake ingredients on low for 30 seconds, then on medium for 2-3 minutes. Divide into cupcake liners. Bake at 350 degrees for 20 – 25 min or until a toothpick comes out clean.
Cream Cheese Frosting
- 2 (8 oz) pkgs. Cream Cheese, softened
- 1/2 c. Butter, soft
- 2 c. Powdered Sugar
- 1 t. Vanilla
Directions
Cream together the cream cheese and butter, until smooth. Mix in the vanilla, then gradually add powdered sugar until you reach the consistency you like.

Sugared Pecans
- 1/2 c. Finely Chopped Pecans
- 2 T. Sugar
In heavy pan, combine pecans and sugar, cook on low until pecans are carmelized. Remove from pan onto wax paper.
Frost and decorate cupcakes as desired. I used candy corn, Fall sprinkles and pecans to decorate mine.
