Back To School Cupcakes
This was taken at Casey’s 5th Grade Graduation in June
Well, the time has come, summer is drawing to a close and it’s back to school for my boys tomorrow. I can’t say it enough, time just flies by. I really have no idea where our summer went. Although, we did get alot accomplished.
Andrew will be a Senior this year, Nick will be a Sophmore and Casey will start Middle School in 6th grade. Wow, again, I can hardly believe it.
Well, we couldn’t start school this week without a special cupcake for the occasion. When I think of school and food, the first thing that comes to mind are apples. And even though they are really a fall fruit, I just had to bake an Apple Cupcake.
Ingredients:
- 1/2 c. Butter, softened
- 2 c. Sugar
- 1/2 t. Vanilla
- 2 eggs
- 2 c. Flour
- 1 1/2 t. Cinnamon
- 1 t. Nutmeg
- 1/2 t. Salt
- 1/2 t. Baking Soda
- 6 c. chopped, peeled tart apples (I used a little less than 6 cups)
Directions:
In a large bowl, cream butter and sugar until light and fluffy.
Add eggs, one at a time, beating well after each.
Beat in vanilla.
Combine dry ingredients, sift, gradually add to creamed mixture and mix well. (batter will be stiff)
Stir in apples until well combined. The batter is very stiff and full of apples ( I will probably use 4 cups of apples next time)
Fill cupcake liners and bake at 350 degrees for about 20 min.
Now, you could very easily stop there and eat these cupcakes, plain (it was delicious) or top them with some whipping cream.
But, since we are making them for Back to School, I just had to frost and decorate them.
I started with chocolate covered graham crackers, Dots candy and Good and Plenty candy.
I used my decorator tube to make the letters and numbers on the crackers. The white Good and Plenty to make the chalk and a red Dot for the apple and a piece of a green Dot cut for the apple stem. Oh, and of course, frosted them with yellow frosting first.
Now, as cute as these are, I can’t take all the credit. I did get the idea from Family Fun, but adapted it a bit for myself.
