It’s November, and we are kicking off this delicious pumpkin filled month with these Pumpkin Pie Cupcake Bites! I don’t know about you, but after a big Thanksgiving dinner, it’s nice to have just a little bite of something sweet. At least to tie you over until the “real” dessert is served.

Back in July, I shared Strawberry Margarita Cupcake Bites baked in these cute little cups, so when I was looking for a mini cupcake to bake for Thanksgiving, I thought of these right away.

The cups are actually made for ketchup and you can find them at restaurant supply stores. The cupcakes bake fine in them and most of the time pop right out. I did have a few, with this recipe, that stuck to the bottom, so you may want to give them a light coat of cooking spray. The cups also tear easily, so to eat them you can just tear the edge of the cup and take the cupcake out.

To bring in more of the Pumpkin Pie flavor, I topped them with real whipping cream and a sprinkle of cinnamon and sugar mixture. You can also use just cinnamon, I found though, if you combine it with a little sugar it looks better on top of the whipping cream or frosting.


Pumpkin Pie Cupcake Bites

The perfect little bite of dessert after a big dinner. Recipe from HoosierHomemade.com

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
  • Total Time: 20 minutes
  • Yield: 24 cupcakes or about 50 mini cups



  • 1 Betty Crocker spice cake mix
  • 1 cup canned pumpkin {not pumpkin pie filling}
  • 1/2 cup buttermilk {splash of vinegar in a measuring cup and fill with milk}
  • 1/3 cup oil
  • 4 eggs
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg

Whipping Cream

  • 1 cup heavy whipping cvream
  • 1/2 cup powdered sugar
  • Splash of vannila



  1. Preheat oven to 350 degrees, place cups on a cookie sheet or liners in a cupcake pan
  2. Mix cake batter with additional ingredients until well combined
  3. Divide into cups or liners – for the cups I used 1 tablespoon batter
  4. Bake cups about 10 minutes and cupcakes about 15-18 minutes or until a toothpick inserted comes out clean

Whipping Cream

  1. Pour cold whipping cream into a small bowl and beat on medium until cream begins to thicken, turn mixer to high and continue beating
  2. Gradually add powdered sugar and beat until cream is stiff
  3. Add vanilla
  4. Fit a decorator bag with a round tip {I used #2A}, fill with whipping cream
  5. Pipe onto cooled cupcakes, sprinkle with cinnamon and sugar mixture, optional

Our Pumpkin Week continues today with these Pumpkin Spice Latte Cupcakes! Are you a Starbucks fan? Do you love their Pumpkin Spice Lattes? If so…you will love these cupcakes! I’ve created two different versions for you today…the kiddos version with Chocolate Pumpkin Cupcakes and the adult version, Pumpkin Spice Latte with the addition Starbucks VIA Coffee!

A couple days ago I shared the Halloween Cookies that I made with a few Wilton products and mentioned the Halloween Cupcakes that I would be sharing today. You all know how much I LOVE Wilton products, and their Halloween line is no exemption.

Have you noticed that the Wilton section in Walmart has increased…a lot? My Walmart is now carrying about 3 times as many Wilton products as before. I was thrilled when I saw that! They have those cool Sugar Sheets like I used when I visited Wilton earlier this year, I need to get some more of those and play with them on Christmas Cupcakes!

But for now…let’s bake some Halloween Cupcakes.

Halloween Cupcake Supplies:


  1. Bake cupcakes without liners {I’m kind of hooked on this idea after baking the cupcake for the Halloween printables}
  2. Let cupcakes cool completely
  3. Cinnamon Whipping Cream {recipe with the Pumpkin Icebox Pie}
  4. Decorating – Using 2 liners, place one on the table and turn the other one inside out and place inside {Love this look…hubby actually came up with it}
  5. Place cupcake in liner
  6. Fit a decorator bag with a #1M Tip and fill with Cinnamon Whipping Cream
  7. Pipe on whipping cream, sprinkle with Hallow Pumpkin Mix and Add Pumpkin Cupcake Pick

And now because Halloween isn’t just for the kiddos…Pumpkin Spice Latte Cupcakes with Cinnamon Whipping Cream displayed in Wilton Cupcake Wraps to add a little sophistication.


Halloween Cupcakes: Pumpkin Spice Latte

A Fall Favorite…Pumpkin Spice Latte Cupcakes adapted by HoosierHomemade.com, recipe originally from Annie’s Eats

  • Prep Time: 15 minutes
  • Cook Time: 20 minutes
  • Total Time: 35 minutes
  • Yield: 24 - 30 cupcakes



  • 2 2/3 cups flour, all-purpose
  • 2 packets {about 2 tablespoons} Starbucks VIA Coffee mixed into 1/4 cup hot water
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ground cloves
  • 1 teaspoon salt
  • 1 (15 oz) can pumpkin {not pumpkin pie filling}
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup oil
  • 4 large eggs

Cinnamon Whipping Cream

  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla



  1. Preheat oven to 350 degrees and place liners in muffin tin
  2. In a medium bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, cloves and salt. Whisk lightly.
  3. In a large bowl, blend the coffee, pumpkin, sugar, brown sugar and oil, mix well.
  4. Add eggs, one at a time, beating after each addition
  5. Add flour mixture in two additions, mixing well after each addition.
  6. Fill cupcake liners with about 1/4 cup batter
  7. Bake about 18-20 minutes or until a toothpick comes out clean
  8. Let cupcakes cool completely
  9. Serve with a spoonful of Cinnamon Whipping Cream and a sprinkle of nutmeg or cinnamon

Cinnamon Whipping Cream

  1. Chill bowl and beaters
  2. Pour whipping cream into chilled bowl
  3. Beat on high until soft peaks form
  4. Gradually add powdered sugar
  5. Add cinnamon and vanilla
  6. Beat until stiff peaks form

Did you see all the really cute Halloween Cupcakes last week on Cupcake Tuesday? There are so many fun ideas floating around right now, there aren’t enough hours in the day.

These Pumpkin Cupcakes not only look like Pumpkins, they taste like Pumpkin and are filled with Pumpkin Mousse! {that’s alot of Pumpkin! LOL}

These Pumpkin Cupcakes are from a recipe I found on Taste of Home, don’t let the list of ingredients scare you away, they go together very easily.


Pumpkin Cupcakes

Make pumpkins cupcakes with this recipe from HoosierHomemade.com.

  • Cook Time: 12 minutes
  • Total Time: 12 minutes


  • 3/4 cup butter, softened
  • 2 1/2 cups sugar
  • 3 eggs
  • 1 can (15 oz) solid-pack pumpkin
  • 2 1/3 cups flour, all-purpose
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1 cup buttermilk (watch my video to see how I make my own)


  1. Preheat oven to 350 degrees.
  2. Fill muffin tins with paper liners.
  3. In a large bowl, cream together butter and sugar until fluffy.
  4. Add eggs one at a time, beating well after each egg.
  5. Add pumpkin, beat well.
  6. In a small bowl, combine dry ingredients, sift together (I use a whisk to mix).
  7. Add to pumpkin mixture, alternating with buttermilk, and beating well after each addition.
  8. Bake cupcakes 10 – 12 minutes or until a toothpick inserted in the center, comes out clean. Or, bake these in Mini Bundt Pans and turn them into Pumpkins (see video. )


Pumpkin Mousse

Yummy pumpkin mousse recipe from HoosierHomemade.com.


  • 1 small box vanilla pudding + milk (2 cups)
  • Whipping cream (real or Cool Whip, about 1 cup)
  • 3 heaping teaspoons pumpkin
  • a sprinkle of cinnamon


  1. Mix pudding and place in fridge to set.
  2. Fold in whipping cream, pumpkin and cinnamon.

Fill cupcakes…or just eat with by the spoonful 🙂

This is really not a “typical” cupcake…but it’s little…cute…and it’s a pumpkin! So I just had to make it for you! And…here’s a video showing you how to create the leaves and tendrils (I called them stems on the video…oh well)

Here’s what you will need to decorate your Pumpkin Cupcakes…

  • Candy Pumpkins – I used Mellowcremes, Jelly and Gummi
  • Sprinkles, optional
  • Cupcake Wrappers, optional {I shared how to make your own in my Cupcake Chronicles Newsletter last week…sign up to learn how}
  • Stems – Pretzel nuggets and green Twizzlers
  • Leaves and tendrils – Fruit slices
