Sugar Cookie Fruit Pizzas

One of the best things about Spring and Summer are all the fresh fruits and vegetables. Sure you can get some of them during the Winter, but somehow they just seem to taste better during the warm weather. Fruit Pizzas recipes have been around for a long time, we all love the recipe that I make in a sheet pan and is great to serve a crowd. But what if you only have a few people to serve, maybe you are hosting a dinner party or just want a special dessert for a weeknight dinner?

These Sugar Cookie Fruit Pizzas are the perfect dessert for just those times. The recipe for the cream cheese spread and glaze tops about 12-18 cookies, depending on the size of your cookie and how much you use. It can easily be doubled though to serve a larger crowd or take to a potluck.

You can make this recipe as simple or complex as you like. Starting with a sugar cookie, you can either make them from scratch {we love this Soft Sugar Cookie Recipe}, purchase a tube of refrigerated sugar cookie dough and bake them, or even purchase Sugar Cookies from the bakery at your grocery store.

After the Sugar Cookies are cooled, then comes the perfect combination of cream cheese, powdered sugar and COOL WHIP whipped topping, giving the Fruit Pizzas just the right amount of sweetness.

Then the fruit…I used Strawberries, Kiwi and Blueberries. I love the flavor combination as well as the brightness the fruit added to the cookies.

To top them off, a drizzle of glaze made with orange and lemon juices, sugar, cornstarch and water, giving them an extra kick of fruit flavor.

Sugar Cookie Fruit Pizzas

Sugar Cookie Fruit Pizzas

Yield: 12-18 cookies
Prep Time: 15 minutes
Total Time: 15 minutes

Ingredients

Cream Cheese Spread

  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 3/4 cup COOL WHIP whipped topping

Fruit Topping

  • Strawberries, Kiwi, Blueberries or any other fruit you like

Glaze

  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 cup unsweetened pineapple juice or orange juice
  • 1/4 cup water
  • 2 tablespoons lemon juice

Instructions

Bake cookies and cool

Cream Cheese Spread

  1. In a mixing bowl, beat cream cheese and powdered sugar until smooth
  2. Fold in whipped topping, set aside

Glaze

  1. In a small saucepan, combine all glaze ingredients, bring to boil and cook for 2 minutes, stirring constantly until thickened
  2. Pour into small bowl and place in fridge until cooled but not set

Assemble Sugar Cookie Fruit Pizzas

  1. Spread each cookie with cream cheese spread, top with fruit and drizzle with glaze
  2. Refrigerate for 1 hour or until chilled

Notes

The recipe for the Cream Cheese Spread and Glaze is enough for 12-18 cookies, it can easily be doubled.
