Citrus Cookies: Picnic Food
Now it’s time for my favorite part of the Picnic…dessert! These Citrus Cookies are light, buttery and a fresh taste. I added lemon and orange, but you could certainly use whatever flavor you like best.
{adapted from Lemon Drop Cookies}
Citrus Cookies
Ingredients
- 1/2 cup Butter, softened {I use I Can’t Believe It’s Not Butter}
- 1/4 cup Sugar
- 1 Egg Yolk
- 1 teaspoon Vanilla
- 1 1/4 cup Flour
- 1/4 teaspoon Salt
- 1 teaspoon lemon zest, finely chopped
- 2-3 tablespoons fresh lemon juice
- 1 teaspoon orange zest, finely chopped
- 2-3 tablespoons fresh orange juice
- Powdered Sugar for dusting
Instructions
- Preheat oven to 325 degrees. Combine butter, sugar, egg yolk and vanilla in large bowl, beat until well mixed. Add flour and salt, beat well.
- Divide dough in half. Add lemon juice and zest to one half of dough. Add orange juice and zest to the other half.
- Shape dough into 1 inch balls. Place on greased or parchment paper lined cookie sheet. Bake for 12 – 15 minutes or until lightly golden. Remove from cookie sheets and let cool.
- Dust with Powdered Sugar if desired.
