Menu Planning has moved

By | Cooking, Menu Planning, Monthly Menu Plan | No Comments

It occurred to me one day last week while looking at the Menu Plan page, that I never told you that I was moving my Menu Planning posts. So, in case you are looking, Menu Planning including a Monthly Menu Plan as well as Weekly Plans will be over at Pocket Change Gourmet.

The August Menu Plan has some new favorites like Grilled Italian Chicken Sandwich {pictured above} and some old standbys too, like Taco Ring. I will be sharing the Weekly Menu Plan every Monday, just like I did here.

You can find all the menu plans under the Menu Planning tab at the bottom of the header and be sure to check out the New Recipe Index that Kohler’s Created! Watch for a new recipe index on Hoosier Homemade soon too!

We have a big week at our house, with school starting and the first football game. Oh, and Nick starts his dental work tomorrow to get ready for his Invisalign Braces, 4 teeth will need to be removed, I think I’ll be making lots of shakes and smoothies this week.

Don’t miss Cupcake Tuesday! I’ll be sharing some more fun Back to School Cupcakes! We also have some yummy desserts planned for you this week along with a bedroom make-over!

Until next time…

Classic Red Potato Salad and Our Menu Plan

By | Cooking, Menu Planning, Salads | 2 Comments

Happy Monday! Did you enjoy your weekend? I had an amazing time at the Evo Conference! I hung out with Gina, Shelley from How Does She and Melissa from The Inspired Room, a HUGE Thank You to Apartment Guide for sending me! I learned a ton, met LOTS of great people and ate lots of great food, especially from Bush Beans and Pepperidge Farm! {more on that later}

Summertime is full of grilling and quick salads. Adding flavor to your Summer salads is not only quick and easy, but especially flavorful with Nakano Seasoned Rice Vinegars. This Classic Red Potato Salad from Nakano pairs perfectly with your grilled meat or fancy enough to take to a potluck or party.

I would have never thought about adding Seasoned Rice Vinegar to Potato Salad, but it turned out great.

Classic Red Potato Salad Recipe

  • 1-1/2 pounds unpeeled red potatoes
  • 1/2 small red onion, finely chopped
  • 1/4 cup NAKANO Seasoned Rice Vinegar Original
  • 3 tablespoons olive oil
  • 2 hard-cooked eggs, finely chopped
  • 1/3 cup packed cilantro leaves, chopped {optional, I left this out}
  • 2 tablespoons mayonnaise

  1. Bring water to a boil on the stovetop. Cut potatoes into small chunks and boil about 8 minutes or until tender. Drain.
  2. While the potatoes are cooking,combine onion, rice vinegar, oil, 3/4 teaspoon salt, and 1/4 teaspoon pepper in a large bowl.
  3. Add hot, cooked potatoes; toss to coat.
  4. Cover and chill.
  5. Gently stir in eggs, cilantro and mayonnaise.
  6. Store leftovers in fridge.

Nakano makes several Seasoned Rice Vinegars that would be great on your next Summer Salad. The Basil & Oregano would be great in the Three Bean Salad, Roasted Garlic for these Chicken Lettuce Bundles or maybe Italian Herb drizzled over Cherry Tomatoes.

Bacon Cheeseburger Buns and Our Menu Plan

By | Cooking, Main Dishes, Menu Planning | 4 Comments

When I first saw this recipe for Bacon Cheeseburger Buns on Taste of Home, I knew it would be a hit with my house full of men…and sure enough it was! I changed the recipe up a bit, by using Crescent Rolls instead of making my own dough, which also made them a really quick and easy meal.

They reminded us of the Taco Ring that I often make and the boys love. I served them for lunch with watermelon, but they are also hearty enough to be served for dinner.

Bacon Cheeseburger Buns

  • Prep Time: 15 minutes
  • Cook Time: 15 minutes
  • Total Time: 30 minutes

  • 2 tubes of Crescent Rolls
  • 1 pound ground beef, cooked and drained
  • 1/2 package bacon {about 8 or 10 slices} cooked and drained
  • 1/2 pound Velveeta cheese or other melting cheese {about 1/4 of package}
  • Salt and Pepper to taste
  • 2-4 tablespoons melted butter
  • Shredded Cheese for topping {optional}
  • Barbeque Sauce for dipping {optional}

  1. Preheat oven to 375 degrees
  2. Spray cookie sheet with non-stick cooking spray
  3. Cook and drain ground beef, set aside
  4. Cook and drain bacon, set aside {I cook mine in the oven}
  5. Cube cheese
  6. Return ground beef to pan
  7. Add bacon and cheese
  8. Stir until all cheese is melted
  9. Unroll crescent rolls, and press 2 triangles together to form a square
  10. Spoon ground beef mixture in the middle
  11. Wrap corners into the middle
  12. Brush with melted butter
  13. Place on cookie sheet and bake for about 12-15 minutes or until golden brown
  14. Serve with ketchup or barbeque sauce

This recipe is easily adapted to different flavors as well. You could also make them into crescent shapes by using the single crescent roll and rolling it up.

Our Menu Plan

Monday ~ Sandwiches and Salad

Tuesday ~ Homemade McGriddles, Fried Potatoes, Fruit

Wednesday ~ Chicken Stir- Fry and Rice

Thursday ~ BBQ Meatballs and Oven Fries

Friday ~ Loaded Baked Potato Bar, Side Salad

Saturday ~ Grilled Honey-Soy Pork Chops, Salad, Deviled Eggs

Sunday ~  Casey’s Birthday Celebration…Mix & Match Burger Bar, Grilled Potatoes and Birthday Cupcakes
