Blueberry Crumb Bars
Last week was our County Fair, I entered these Blueberry Crumb Bars and got 2nd place.
Ingredients:
- 1 c. White Sugar
- 1 t. Baking Powder
- 3 c. Flour
- 1 c. Butter, cold and cut into pieces
- 1 Egg
- 1/4 t. Salt
- Zest and Juice of 1 Lemon
- 4 c. Fresh Blueberries
- 1/2 c. Sugar
- 4 t. Cornstarch
Directions:
Mix 1 c. Sugar, Flour and Baking Powder. Mix in Salt and Lemon Zest. Add butter and egg and mix until crumbly. I used my food processor.
Pat half of dough into 13 x 9 pan.
In another bowl, stir together the sugar, cornstarch and lemon juice. Gently mix in blueberries. Sprinkle over crust. Crumble remaining dough over berries.
Bake at 375 degrees for 45 min or until slightly brown. Let cool and cut into bars.
