White Chocolate Peppermint Chex Mix
Ingredients
- Chex Cereal – rice or corn is fine
- White Chocolate Almond Bark – you can also use white chocolate chips but I have found Almond Bark to be easiest to melt
- Candy Canes
- Pearlized Sugar Sprinkles – or other Christmas sprinkles you like
- Powdered Sugar
Kitchen Essentials Needed
- Large Bowl
- Rubber Spatula
- Resealable Bags – 1 large and 1 medium
- Rolling Pin or Hammer – for breaking up the candy canes
- Measuring Cup
- Microwave Safe Bowl
- Parchment Paper
- Cookie Sheet with rim
How to make White Chocolate Peppermint Chex Mix
- Add Chex cereal to large bowl
- Crush candy canes in medium resealable bag using a rolling pin or hammer
- Melt Almond Bark in microwave safe bowl. Start with 1 minute, then stir. Heat for 30 second intervals, stirring after each heating. Stop when there are a few bits of chocolate left, then stir until completely melted.
- Pour melted chocolate over cereal, stir until well coated
- Sprinkle with crushed candy canes and sprinkles
- Stir to mix in the candy canes
- Pour into large resealable bag
- Add powdered sugar into bag, close and shake
- Pour mixture onto parchment paper lined cookie sheet
- Let set for about 10 minutes until chocolate is hard
Here are a few tips that I have found helpful with making this Chex Mix –
Cook’s Tip #1: Melting chocolate – if you still have larger pieces of chocolate chips left after heating for 1 minute, continue heating in microwave for 5-10 seconds at a time.
The key though is to stop the heating process BEFORE all the chocolate chips are melted. It’s really easy to burn chocolate in the microwave, so it’s best to stop before they are completely melted and stir until they are melted.
Cook’s Tip #2: Powdered Sugar – is also known as Confectioners Sugar
Cook’s Tip #3: Children – this recipe is a great starter recipe for young cooks, just be sure to give supervision with the warm bowl of chocolate mixture and the microwave.
Cook’s Tip #4: This White Chocolate Peppermint Chex Mix makes a great gift for teachers, friends, neighbors, the postal worker and more!
