Raspberry Meringue Drops for Valentine’s Day

Are you tired of all the Valentine treats yet? I hope not, because these Raspberry Meringue Drops are a must try!! They are light and airy and simply melt in your mouth. I’ve eaten more than I care to admit this afternoon.

We have had our share of chocolate treats this week. I know these aren’t technically chocolate, although they do have chocolate on them! And you could certainly change the recipe and make them chocolate if you like, but the Raspberry is well worth making!

Raspberry Meringue Drops
 
Celebrate Valentine's Day in a special way with Raspberry Meringue Drops recipes from HoosierHomemade.com!
Ingredients
  • 4 eggs whites, room temperature
  • Pinch of Cream of Tartar
  • ½ teaspoon vanilla
  • 1 cup sugar
  • 1 teaspoon Raspberry Flavoring
  • Pink food coloring
  • Melting Chocolate or Almond Bark {like I showed in the Cookie Dough video}
Instructions
  1. Preheat oven to 250 degrees.
  2. Separate eggs, putting egg whites in a bowl {make sure they are room temperature, they will beat up better}.
  3. Add the cream of tartar and vanilla, beat until soft peaks form.
  4. Gradually add the sugar and beat until STIFF peaks form.
  5. Add the Raspberry flavoring and 1-2 drops of pink food coloring.
  6. Beat until VERY STIFF peaks form. The mixture should look like this…
  7. Cover a cookie sheet with wax or parchment paper.
  8. Fill a decorator bag fitted with a giant round or a giant star tip.
  9. Pipe a small amount of meringue onto the cookie sheet.
  10. Bake for about 1 hour, or until drops are dry.
  11. They will feel hard, but not too hard, and slightly brown.
  12. Remove from oven and let cool completely.
  13. Melt chocolate and carefully dip the bottom of the drop into the chocolate.
  14. Place on wax paper until set.

    Thanks for the recipe. Everyone loved them!
    I did make one small change. I baked them at 250 degrees for about 25 minutes, then turned the oven off and left them in for another 20 minutes. Needless to say a few meringues didn’t make it to the Valentine luncheon!
    Thanks for another neat idea! Next time, I think I will make some meringue hearts.
