Grilled Chicken Salad with Fresh Raspberry Dressing and a Giveaway

I recently received a bottle of  NAKANO® Seasoned Rice Vinegar for my review. I had never heard about these seasoned rice vinegars before, but we really like marinating and grilling, so I was excited to give it a try.

I also received a little recipe booklet, and chose the Grilled Chicken Salad with Fresh Raspberry Dressing, to try. We love a great salad during the hot Summer months, and when you combine it with fresh fruit…even better!

Grilled Chicken Salad with Fresh Raspberry Dressing

A delicious Grilled Chicken Salad with Fresh Raspberry Dressing - recipe from HoosierHomemade.com

Ingredients

  • 3/4 cup plus 1 tablespoon NAKANO® Seasoned Rice Vinegar
  • 1 teaspoon dried tarragon, crushed
  • 1/2 teaspoon salt
  • 4 boneless, skinless chicken breast
  • 2 navel oranges
  • 1 cup fresh raspberries (about 5 ounces)
  • 3 tablespoons honey
  • 1 tablespoon salad oil
  • 12 cups mixed greens
  • 1 tablespoon olive oil
  • Toasted pecans (optional)

Instructions

  1. Combine 1/2 cup rice vinegar, tarragon, and salt, stir well.
  2. Place chicken in shallow, non-metallic container.
  3. Add vinegar mixture, marinate for about 45 minutes.
  4. Drain chicken and discard marinade.
  5. Grill or saute chicken.
  6. When slightly cooled, slice each breast, cover and set aside.
  7. Grate the peel of 1 orange, set aside.
  8. Peel both oranges and slice.
  9. In blender, combine raspberries, 1/4 cup rice vineagar, honey, salad oil, and orange zest.
  10. Blend until smooth.
  11. In a large bowl, drizzle greens with olive oil and a dash of salt, toss well to coat.
  12. Drizzle greens with remaining 1 tablespoon rice vinegar, toss.
  13. Place greens on a serving platter or on individual plates.
  14. Add sliced chicken and orange slices.
  15. Pour raspberry dressing over chicken or serve on the side, like I did.
  16. Sprinkle with toasted pecans, if desired.

We really enjoyed this salad. The chicken was very moist and flavorful. My youngest is not a salad eater, so he just had the chicken, and liked it as well.

A few quick tips to use the NAKANO® Seasoned Rice Vinegars

  • Splash on sliced, fresh tomatoes
  • Stir into cole slaw recipes
  • Splash on white rice
  • Toss into bean salads or green leafy salads
  • Marinate beef or pork before cooking

    My favorite splash tip is to splash it on a baked potato in place of sour cream and butter…wow…that would save you a ton of calories and make the potato healthy!!

    I think I found the right “splash tips”. I looked up the balsamic rice vinegar, and thought brushing over grilled veggies sounded yummy. I have a much neglected bottle of rice vinegar up in my cupboard. Right now it only gets used in making egg-rolls, but I’m going to check out some recipes and put that bottle to good use this week!

    For a simple salad, mix with a little brown sugar and dill weed. Drizzle over fresh baby carrots and season to taste with salt.

    Cut a ripe avocado in half and remove pit. Pour seasoned rice vinegar into each half and eat with a spoon. Anything to make an excuse to eat a avocado.

    My favorite tip is: Brush over thick-sliced red onions and drizzle with olive oil; season with salt and pepper. Grill or pan-fry until slightly browned and softened. Serve with grilled meats or chicken.

    I have many favorite ways to use Nakano Seasoned Rice vinegars. I was lucky enought to have stayed in Japan for several weeks. During this time, I learned many different things about cooking Japaneese foods. I make Kim-Chee, and I always add Nakano to it. I add it also when I make Sushi, and it is Great on any meats, especially fish! :-D
