Cheesy Potato Casserole

[ 7 ] April 2, 2009 | CupcakeLady

This weeks’ theme on the Ultimate Recipe Swap is Christmas Must-Haves. I am going to share with you my Cheesy Potato Casserole recipe. This is my husband’s favorite dish, he could eat the whole pan by himself.  I usually only make it on a holiday. I’m sorry I don’t have a picture to show you yet.

Cheesy Potato Casserole

32 oz. pkg. hash browns (I use the small squares)

1/2 c. grated Cheddar cheese

1 can Cream of Chicken Soup

1 (16 oz) container sour cream

1/4 c. butter, melted

5 c. corn flakes

Mix together everything except the butter and corn flakes. Mix corn flakes into the butter, set aside. Place hash brown mixture into ungreased 13 x 9 dish or casserole. Spread cornflake mixture over hash brown mixture. Bake, uncovered at 325 for 1 and 1/2 hours.
