Cheesy Mexican Potatoes

Football season is heating up and I have been trying out new recipes for our Super Bowl Party! I love to create new fun dishes for the party, and these Cheesy Mexican Potatoes are my new favorite!

Having 3 sons and a husband, we like football around here- and the Super Bowl gives us an excuse to go all out!  We always makes new appetizers and these Cheesy Mexican Potatoes are the first to make the cut for our party this year!

Our Super Bowl party always draws a crowd, so I need fast- but delicious- recipes! A few great things about this recipe. First, you don’t have to peel the potatoes. I hate peeling potatoes and feel like it makes any potato dish take so long!

Second, the Ro*Tel and Rosarita make this dish come together so fast. I love the combination, it has such a great blend of Mexican flavors!

After you dice the potatoes, add them to a bowl with the Ro*Tel, salsa, and half of the cheese. You can choose any kind of salsa- it is a great way to change the spice level of the recipe! I love keeping Ro*Tel on hand- I feel like it adds a little pizzaz to recipes! If you’ve never cooked with Ro*Tel it is an awesome blend of tomatoes, green chilies and secret spices!

Then, add in the Rosarita and mix again. I feel like the refried beans definitely make this a more filling appetizer! Rosarita have a great authentic Mexican taste too!

Next, spread the mixture into a casserole dish and top with the rest of the cheese. Then comes the fun part- eating! Serve as is, or with more cheese, avocado, or any other topping of your choice! Some crumbled tortilla chips would be great for added crunch!

I love having recipes that can be personalized a bit with toppings- especially at a Super Bowl party when I am serving a crowd.

I also love that my Walmart carries both Ro*Tel and Rosarita- one stop shopping- and they are even on the same aisle at my store!

Cheesy Mexican Potatoes

Yield: 4-6
Prep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour 15 minutes

Perfect for game night, parties, birthday celebrations and more!

Ingredients

  • 3 large baking potatoes
  • 1/2 cup salsa
  • 1 can Ro*Tel Diced Tomatoes and Green Chilies
  • 1/2 can Rosarita refried beans
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Dice potatoes, rinse, then combine in a large bowl with salsa, Ro*Tel, and half of your cheese.
  2. Add in refried beans, and mix thoroughly.
  3. Spread into casserole dish, and top with remaining cheese. You can add more if you want it extra cheesy.
  4. Bake at 350 for 30-40 minutes, until potatoes are tender.
  5. Serve as-is or with sour cream, avocado, or topping of your choice.

  1. I’m thinking about trying making this recipe with Hashbrown Potatoes that are thawed and patted dry thoroughly. I love them in the popular cheesy Hashbrown Casserole so I might just make this for my husband and I. My little experiment. We love ❤️ Mexican food and Potatoes so it should be fine. Thanks for sharing. **

  2. Potatoes needed a lot longer to cook, mine was in 1HR and potatoes were hard, next time I will par boil because they were TASTY,

  3. What salsa do you use? Also recipe calls for sharp cheese but on pictures seems looks like you used mexican blend ?.

    1. Hi Maria, we like mild chunky salsa, any brand really. Mexican cheese will work, in the recipe we have shredded cheddar cheese.
