Watermelon Cupcakes: Cupcake Tuesday

Well, I don’t know about you, but Summer is going by WAY too fast! My boys only have 2 weeks left before school starts, and Nick has already started Football practice. I’m actually one of those Moms that don’t like when the kids go back to school, I love them being home {most days}, although I do like the schedule that the school year forces upon us.

But…we aren’t to school time quite yet! I’m holding onto every last day of Summer, especially with these Watermelon Cupcakes. By adding watermelon flavored Jello-O, it gives the cupcakes a nice hint of watermelon, but not too overpowering.

Now, let’s talk cupcakes…by adding a few drops of pink coloring and some mini chocolate chips to the cake, you can create fun, Summer Cupcakes. I frosted them using a Round #12 tip, rolled in Pink Sparkling Sugar and topped with a few more mini chocolate chips.

You could also leave out the chocolate chips and they would be a fun pink cupcake for a little girls birthday party.

Watermelon Cupcakes

Watermelon Cupcakes

Yield: 24-30 cupcakes

Ingredients

Cupcakes

  • 1 box white cake mix {plus ingredients: Buttermilk, Oil and 4 eggs}
  • 1 small box Watermelon flavored Jell-O
  • Mini Chocolate Chips {enough to sprinkle about 10 into each cupcake and for decoration}
  • 2-4 drops pink coloring
  • Pink Sparkling Sugar

Frosting

  • 1/2 cup butter
  • 3-4 cups powdered sugar
  • 1-2 tablespoon milk
  • 1 tablespoon vanilla
  • 2-4 drops pink coloring
  • Watermelon flavoring {optional}

Instructions

Cupcakes

  1. Preheat oven to 350 degrees and line muffin tin with cupcake liners.
  2. Combine cake mix, Jell-O, buttermilk, oil, and eggs until well combined.
  3. Stir in pink coloring a little at a time until you get the desired color.
  4. Add a scoop {tablespoon or so} of batter to cupcake liner.
  5. Sprinkle 5-6 mini chocolate chips.
  6. Add another scoop of batter and more chips.
  7. Top with a little more batter if you have room.
  8. Bake for about 10-15 minutes or until a toothpick inserted comes out clean.

Frosting

  1. Beat butter until fluffy.
  2. Gradually add powdered sugar, alternating with milk and vanilla.
  3. Beat until well combined.
  4. Add pink coloring a little at time until desired color.
  5. You can also add Watermelon flavoring, if you want. You can find it near the candy making supplies.
  6. Fit a decorator bag with a Round #12 tip, fill bag with frosting and pipe onto cupcake.
  7. Roll in Pink Sparkling Sugar and add mini chocolate chips for decoration.

Although it’s not a juicy slice of watermelon, the inside of the cupcake will definitely resemble one.

    1. Hi Maddie, sometimes it’s because of the oven and over beating the batter. Have you had trouble with other cupcakes doing the same or just this recipe?

  4. I just tried this recipe today, and not sure why but it did not work. Does not taste like watermelon at all. I bought everything that you listed, and prepared it just as it was instructed. Not sure where I went wrong. Weren’t they supposed to taste like the jello flavoring?

    1. Hi Jenna, I’m not sure why they didn’t taste like watermelon, they did to me. Yes, the jello is where the flavoring comes from.

    1. Sure…to a cake mix add buttermilk instead of water {usually 1 cup}, and the amount of oil on the box {usually 1/3 cup}
