Ultimate Triple Chocolate Chunk Cookie and a Fridge Makeover

As you well know, if you have been around here, there is always some cooking and baking going on in our home! While I cook and bake, almost, everything from scratch, I’ll have to admit that sometimes our choices of ingredients are not always as healthy as they should be.

I have tried to get motivated to change some things, but had not gotten around to it. Then I got a little kick in the pants from I Can’t Believe It’s not Butter!®, when they sent me an awesome box full of goodies to makeover our fridge!

I will have to give the makeover credit to Doug, my husband, he actually does a better job with keeping the fridge clean and straight than I do. It seems like I am always in such a hurry, I just kind of stick things in quickly and don’t pay much attention to how long the food is in the fridge. I know…not so good. Doug took some pictures of his fridge makeover to share with you…

Now, while our fridge makeover is far from perfect, it is definitely an improvement! With the Holidays quickly approaching, every little change we can make will help. I saw these Ultimate Triple Chocolate Chunk Cookies on the I Can’t Believe It’s Not Butter website, and I just had to share. I think they would make a yummy addition to any Holiday get-together.

Ultimate Triple Chocolate Chunk Cookie

Ultimate Triple Chocolate Chunk Cookie recipe from I Can't Believe It's Not Butter! on HoosierHomemade.com

Ingredients

  • 2-1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp. baking soda
  • 1 cup (2 sticks) I Can’t Believe It’s Not Butter!® Sticks
  • 1 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 6 oz. bittersweet chocolate, coarsely chopped (or chips)
  • 6 oz. white chocolate, coarsely chopped (or chips)
  • 1/2 cup EACH dried cranberries and coarsely chopped toasted pecans

Instructions

  1. Preheat oven to 375°.
  2. Combine flour, cocoa powder and baking soda in medium bowl; set aside.
  3. Beat I Can’t Believe It’s Not Butter!® Sticks with sugars in large bowl with electric mixer or wooden spoon until smooth.
  4. Beat in egg and vanilla.
  5. Stir in flour mixture just until blended.
  6. Stir in chocolate, cranberries and pecans.
  7. Drop mixture by 1/4-cupfuls, 3 inches apart, on ungreased baking sheets.
  8. Bake 11 minutes or until edges just begin to set. Do not over bake; cookies will firm as they cool.
  9. Cool 2 minutes on wire rack; remove from sheets and cool completely.

  1. Making sure you clean your fridge weekly is really important to keeping it looking nice and organized!

  2. My husband is really good about eating leftovers. I just try to keep the older containers near the front of the fridge so those will be grabbed first.

    My best organized fridge tip is to do a quick cleaning once a month or so right before you go grocery shopping (when it is the most empty). This helps me keep odors away and make sure nothing is expired!

  4. I like to deep tupperware labled with date and item inside and all in one section of fridge with the oldest towards the front. Although a little more work, there is no guess work and food is not wasted.

    my tip for keeping the refrigerator clean is keeping limits,like only 3 salad dressing bottles, 2 types lunchmeat and so on. when one is gone a new one can be opened. that way those little “orphan” foods don’t get lost.

    We keep all containers of leftovers on a certain shelf so we know what needs to be used up and our teen boys know that if it’s on that shelf then it’s ‘free’ for them to eat. On another shelf, I keep refrigerated foods that are part of my weekly menu plan and everyone knows NOT to touch these! Another shelf has this n that and then we have a container in the fridg that has individually bagged fruit, veggies, sandwich wraps, etc that the boys can grab as a snack or meal on the go. This is how we keep our fridg organized 🙂

  8. Labels and see through containers are key in keeping our fridge neat.

  9. I second Danielle’s comment. I go through ours every week the night before Trash pick up too and throw out leftovers etc. We usually have leftovers that night for dinner as well.

    One of my “NEVER DO IT” rules is to never put anything in a container that can not be seen through. When I do purchase prepared deli meats, I buy the ones in the clear containers…they are perfect for storing smaller amounts of left over frosting, soups, pastas…etc! If you cant see it the old addage “Out Of Sight-Out Of Mind” really comes to fruition!They stack perfectly and are available at a glance. Oh yeah..the I Can’t Believe It’s Not Butter containers (I started using once my RX was to lower Cholesterol) are wonderful for holding self-colored sugars for cookie spinkels. I also use them to hold sprinkles when dipping frosted cupcakes…works great for me! Have a wonderful Holiday Season!

    Every Sunday is “Old food Removal Day”. It gives me a chance to take inventory for the week and get rid of food that is old or will not get eaten. Once a month I sanitize the fridge with bleach.

    I noticed how unpleasent our fridge was looking and I was amazed at how much better it looked with just a quick wipe down of the shelves.
    Like you, things may stick around in there longer than they should. So now I try to give things a look over every few days to make sure they’re still fresh.

  14. To keep organized, I make sure to rotate the food so that the newer stuff is in the back. Also, to throw away anything that looks a little past its prime:)

    I don’t have a full size fridge, I’d say a small apartment size fridge and I manage to stack stuff and fit a ton of things in it. I clean out my fridge 1-2 weeks and ensure everything it’s in it’s place. Everytime I visit family or firends i clean out their fridges…I know they can fit twice as much in it, they just need to organize. 🙂
