As you well know, if you have been around here, there is always some cooking and baking going on in our home! While I cook and bake, almost, everything from scratch, I’ll have to admit that sometimes our choices of ingredients are not always as healthy as they should be.

I have tried to get motivated to change some things, but had not gotten around to it. Then I got a little kick in the pants from I Can’t Believe It’s not Butter!®, when they sent me an awesome box full of goodies to makeover our fridge!

I will have to give the makeover credit to Doug, my husband, he actually does a better job with keeping the fridge clean and straight than I do. It seems like I am always in such a hurry, I just kind of stick things in quickly and don’t pay much attention to how long the food is in the fridge. I know…not so good. Doug took some pictures of his fridge makeover to share with you…

Now, while our fridge makeover is far from perfect, it is definitely an improvement! With the Holidays quickly approaching, every little change we can make will help. I saw these Ultimate Triple Chocolate Chunk Cookies on the I Can’t Believe It’s Not Butter website, and I just had to share. I think they would make a yummy addition to any Holiday get-together.

Ultimate Triple Chocolate Chunk Cookie

Ultimate Triple Chocolate Chunk Cookie recipe from I Can't Believe It's Not Butter! on HoosierHomemade.com

Ingredients

  • 2-1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp. baking soda
  • 1 cup (2 sticks) I Can’t Believe It’s Not Butter!® Sticks
  • 1 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 6 oz. bittersweet chocolate, coarsely chopped (or chips)
  • 6 oz. white chocolate, coarsely chopped (or chips)
  • 1/2 cup EACH dried cranberries and coarsely chopped toasted pecans

Instructions

  1. Preheat oven to 375°.
  2. Combine flour, cocoa powder and baking soda in medium bowl; set aside.
  3. Beat I Can’t Believe It’s Not Butter!® Sticks with sugars in large bowl with electric mixer or wooden spoon until smooth.
  4. Beat in egg and vanilla.
  5. Stir in flour mixture just until blended.
  6. Stir in chocolate, cranberries and pecans.
  7. Drop mixture by 1/4-cupfuls, 3 inches apart, on ungreased baking sheets.
  8. Bake 11 minutes or until edges just begin to set. Do not over bake; cookies will firm as they cool.
  9. Cool 2 minutes on wire rack; remove from sheets and cool completely.

  1. We have had to make over our fridge since my mom moved in with us over a year and a half ago. We decided to purchase glass containers ( you can see what we have as left overs). We are still working on the other parts of the makeover!

  2. My best tip is to clean it out weekly. Label everything!

  3. Oh, how I wish I were the kind of person who had a refrigerator organizing tip! The closest I can get is to recommend using clear storage containers for leftovers. Storing something in a sour cream container means it could be lost until it’s turned into something green and fuzzy.

  4. If it something that won’t keep very long to put in a ziplock bag or clear plastic container.

    I always wipe the condiment jars before I put them back in and throw out the old leftovers every few days. If you stay on top of it it won’t be so bad.

    I have found that my biggest problem in keeping my fridge organized is condiments. At one point it seemed like I had 10 bottles of salad dressing and 4 jars of various pickles. So I set a limit of 2 bottles of salad dressing and 2 jars of pickles. It seems like I don’t miss the variety and it has eliminated some of the clutter.

    My best fridge makeover is to have left overs used up within two days, either sending it in lunch boxes for work, or for another meal. End of the week I go through fridge for the pitch out which surprisingly is not much. I try not to make so much that we are eating the same thing forever. I also wipe down fridge at the end of week cleanout with vinegar diluted with water.

  10. My best fridge makeover tip is every time I bring groceries into the house, I look thru and discard anything I need to in the fridge to make room, and organize as I put the new stuff in

  11. My biggest fridge makeover tip is to use the bins in the door to keep like items together. I use one for my dressings, one for condiments, one for ‘sweet things’ like whipped cream and chocolate sauce..etc, one for the jellies and such and the bottom as a catch all for the things I use to cook with like bbq sauce, soy sauce, etc.

    This is a huge time saver because when I go to grab something, I only have a few bottles to choose from instead of an entire door full of things.

  12. Clean out your fridge weekly and keep like items stored together.

  14. My biggest fridge problem (besides the really old fridge itself) is the veggie bins. Sometimes I forget that there are vegetables in there until it’s too late. Then when I discover the icky mess, it’s usually at a really bad time and I can’t get to cleaning it right away. I mean, who wants to clean that really??? So, I’ve been putting a layer or two of paper towels on the bottom of the drawer. It usually absorbs some of the veggie juices, I just toss it all away. Then a good swipe with a clean towel (some type of spray cleaner maybe) is good enough. I don’t have to try to fit the entire drawer into the sink to clean out the mess!

    Keep in mind, it’s not like this happens every week or even every month….but it helps for those occasions that it does happen.

  15. I try to keep my fridge very tidy. I remove all drinks and food that the family is not using. I pass things along. There is so much food (ofcourse hardly paid for) that I giveaway to the church or take it to work.

    Ziploc containers are alway handy for left overs.
