As you well know, if you have been around here, there is always some cooking and baking going on in our home! While I cook and bake, almost, everything from scratch, I’ll have to admit that sometimes our choices of ingredients are not always as healthy as they should be.

I have tried to get motivated to change some things, but had not gotten around to it. Then I got a little kick in the pants from I Can’t Believe It’s not Butter!®, when they sent me an awesome box full of goodies to makeover our fridge!

I will have to give the makeover credit to Doug, my husband, he actually does a better job with keeping the fridge clean and straight than I do. It seems like I am always in such a hurry, I just kind of stick things in quickly and don’t pay much attention to how long the food is in the fridge. I know…not so good. Doug took some pictures of his fridge makeover to share with you…

Now, while our fridge makeover is far from perfect, it is definitely an improvement! With the Holidays quickly approaching, every little change we can make will help. I saw these Ultimate Triple Chocolate Chunk Cookies on the I Can’t Believe It’s Not Butter website, and I just had to share. I think they would make a yummy addition to any Holiday get-together.

Ultimate Triple Chocolate Chunk Cookie

Ultimate Triple Chocolate Chunk Cookie recipe from I Can't Believe It's Not Butter! on HoosierHomemade.com

Ingredients

  • 2-1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp. baking soda
  • 1 cup (2 sticks) I Can’t Believe It’s Not Butter!® Sticks
  • 1 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 6 oz. bittersweet chocolate, coarsely chopped (or chips)
  • 6 oz. white chocolate, coarsely chopped (or chips)
  • 1/2 cup EACH dried cranberries and coarsely chopped toasted pecans

Instructions

  1. Preheat oven to 375°.
  2. Combine flour, cocoa powder and baking soda in medium bowl; set aside.
  3. Beat I Can’t Believe It’s Not Butter!® Sticks with sugars in large bowl with electric mixer or wooden spoon until smooth.
  4. Beat in egg and vanilla.
  5. Stir in flour mixture just until blended.
  6. Stir in chocolate, cranberries and pecans.
  7. Drop mixture by 1/4-cupfuls, 3 inches apart, on ungreased baking sheets.
  8. Bake 11 minutes or until edges just begin to set. Do not over bake; cookies will firm as they cool.
  9. Cool 2 minutes on wire rack; remove from sheets and cool completely.

  1. I always keep a box of Arm&Hammer Baking Soda in my fridge to keep it fresh and clean smelling and absorb stray odors. I try to keep a running check daily on foods to use fast or throw while planning uses for other products, fruits and veggies each time I open the door. Putting small things in a Ziploc bag or plastic organizer, like little restaurant salad dressing pouches, ketchup pouches, etc. really helps to keep it neater and fumble-free and keeps them from falling out and onto the floor. Thanks for the contest and love your site! I do love a man with dustpan hands(especially mine)!!

  2. I try to go through the fridge every week, and, particularly, right before grocery shopping so nothing gets old or gross before i can use it.

    I am so glad you posted this! It has actually never occurred to me to use ICBINB sticks in my frostings, etc. Duh! I will be stocking more of them and less butter this holiday season, because Hubby and I are trying to lower our cholesterol. My tip: I have found that leftovers are more likely to be eaten when stored in clear containers. It seems to me that we are too lazy to lift a lid to see what’s inside, but will look at a clear bowl, and say ” yum, I forgot we had some of that left”! I cook only one meal a day (lunch or dinner depending on our schedule) and the other is leftovers, sandwiches or salad. Works for us!

  5. With 6 people in the house, and 4 under 4ft tall the fridge gets a workout. We use labels so everyone knows where everything goes. Plus, it gets a clean out before grocery shopping.

  6. I do a fridge clean out every Sunday as I typically am planning meals and making lists at that time.

  7. I go thru weekly before grocery shopping and reorganize, tossing the items that are out of date, making note of what we need and wiping off the glass shelves.

  8. I have certain areas in the fridge for specific things. I keep all the condiments grouped together, all the rolls/bread together, all the leftovers together, ect. Sometimes when I’m in a rearranging mood I drive my family crazy because I will move things and then when the time comes for someone to get something it is not where it “should” be. I go through everything once a week, before trash pickup, to make sure nothing funky is growing out of any containers!

  9. When I make my grocery list, I go through the fridge to see what needs to be thrown out and what we’ll need. I also like to put doubled up sheets of paper towel, in my crisper. When they get dirty or soggy, I just toss and reline.

  10. Fridays are “clean the fridge day” then once a month I will do a deep clean that involves taking out everything in there and then washing down the inside. We will also have a leftover day each week where we just pull out what is in the fridge and warm it up for supper.

  11. I go through and clean out our fridge once a week.

  12. My best fridge makeover tip would be to use paper bags on the bottom of your crisping/vegetable bins. When they become soiled (or full of onion skin) you can just pull them out and recycle them thereby keeping your bins clean.

  15. I purchased the cheap shelving you can buy for kid’s lockers. That way I can double my space without having to constantly move the shelves around.
