Conversation Heart Cupcakes with Homemade Marshmallow Frosting

We are having such a great time sharing Valentine’s Day ideas, I hope you are enjoying them! Did you see the Valentine’s Day Party yesterday, there are over 400 wonderful ideas! Wow!

Today I have some really easy Valentine’s Day Cupcakes that you and the kiddos can make together! Not only are the sweet little cupcakes, Vanilla Cupcakes with Fluffy Marshmallow Frosting, delicious, they can be personalized with Conversation Hearts!

These would be perfect for a classroom party…don’t you think? Write each child’s name on the Conversation Heart for them to enjoy!

Let’s get started…

The Vanilla Cupcakes started with a box mix, then I added the ingredients to make them taste homemade {check out my video showing you how}, then the Fluffy Marshmallow Frosting {recipe below}, which is now my absolute favorite frosting, thanks to Cake Duchess for sharing it! I may or may not have eaten the frosting by the spoonful…several times…I’ll never tell the truth!

And then the most adorable Conversation Hearts were placed on top. Brach’s is sharing their new Create Your Own Large Conversation Hearts this year, exclusive and available at your local Walmart. The blank candy hearts come with a food-safe writing pen for you to personalize your own Conversation Hearts!

Fluffy Marshmallow Frosting

The best marshmallow frosting ever! Light, fluffy and not too sweet. Recipe from HoosierHomemade.com

  • Prep Time: 15 minutes
  • Total Time: 15 minutes

Ingredients

  • 1 cup of sugar, granulated
  • 1/3 cup water
  • 1/2 teaspoon cream of tartar
  • 4 Egg whites, room temp

Instructions

  1. In a saucepan, add sugar, water and cream of tartar.
  2. Bring to boil, do not stir, until temperature reaches 245 degrees. Bubbles should be clear.
  3. While the syrup is cooking, beat egg whites until soft peaks form.
  4. When syrup reaches 245 degrees, remove from heat, and carefully, slowly pour into the egg whites, while the mixer is running. Beat on high speed for 5-7 minutes until stiff peaks form.
  5. Optional flavoring – add 1 teaspoon vanilla or other flavoring if desired, gently fold in.
  6. Optional coloring – add a very small amount of gel paste coloring, and slowly fold into the frosting, be careful not to deflate the egg whites.

Notes

This recipe makes enough for a 2 layer cake, 13×9 cake or 24-30 cupcakes.

Valentine Cookie Pops

I have a super fun treat for you today…Valentine Cookie Pops! With just a few simple ingredients, you can create these for your kiddos, your sweetie or even as classroom treats.

“Bee my Valentine”“You’re PURR-fect” or how about “I have my EYE on you!”

Aren’t they fun? I used canned frosting {it melts the best} to coat the cookies, but you could also use candy melts or Almond Bark.

Let’s gather our supplies…

Valentine Cookie Pops: “Bee My Valentine”

“Bee” My Valentine, Cookie Pops from HoosierHomemade.com

Ingredients

  • Nutter Butter Cookies
  • Lollipop Sticks
  • Small amount of melted chocolate – you can use candy melts, chocolate chips or Almond Bark
  • White canned frosting
  • Buttercup Yellow & Black Coloring
  • Spaghetti, uncooked
  • Yellow mini M&M’s
  • Marshmallows – I used Stackers
  • Small paint brush
  • Wax Paper

Instructions

  1. Carefully take apart cookie
  2. Melt chocolate and dip end of lollipop stick in chocolate and place in frosting on cookie, replace top of cookie
  3. Place on wax paper and place in freezer for at least 15 minutes
  4. With a paint brush and the black coloring, paint the spaghetti for antenna, set on wax paper to dry
  5. Color frosting, some with yellow and some with black, the amount of frosting will depend on how many cookies you are coating
  6. Melt in microwave for about 20 seconds
  7. Coat the whole cookie with yellow, let excess drip off back into the bowl and place in floral foam to keep it upright, let set a few minutes
  8. Add black frosting on the ends, place in freezer for about 5 minutes
  9. Cut marshmallows, add to bee with frosting or melted yellow candy melts
  10. Add yellow eye and antennas

Valentine Cookie Pops: “You’re PURR-fect”

Cat-lovers will PURR over these Valentine Cookie Pops from HoosierHomemade.com!

Ingredients

  • Round sandwich cookies – like Oreos
  • Lollipop Sticks
  • Small amount of melted chocolate – you can use candy melts, chocolate chips or Almond Bark
  • White canned frosting
  • Black Coloring
  • Spaghetti, uncooked
  • Eyes – Mini M&M’s
  • Ears – Tootsie Rolls
  • Nose – Jumbo pink heart sprinkle
  • Mouth – red Jimmies
  • Small paint brush
  • Wax Paper

Instructions

  1. Carefully take apart cookie
  2. Melt chocolate and dip end of lollipop stick in chocolate and place in frosting on cookie, replace top of cookie
  3. Place on wax paper and place in freezer for at least 15 minutes
  4. With a paint brush and the black coloring, paint the spaghetti for whiskers, set on wax paper to dry
  5. Place white frosting in a bowl, amount will depend on how many cookies you are coating
  6. Melt in microwave for about 20 seconds
  7. Coat the whole cookie, let excess drip off back into the bowl. Add crushed cookies if desired, and place in floral foam to keep it upright, place in freezer for about 5 minutes
  8. Meanwhile, prepare the face – soften Tootsie Rolls in your hands, push flat and cut ears. Layout other candy for face
  9. Place in freezer to set, about 15 minutes

Valentine Cookie Pops: “I Have My EYE On You!”

Eye candy for Valentine’s! Make these fun eyeball Valentine Cookie Pops from HoosierHomemade.com.

Ingredients

  • Round sandwich cookies – like Oreos
  • Lollipop Sticks
  • Small amount of melted chocolate – you can use candy melts, chocolate chips or Almond Bark
  • White canned frosting
  • Eye – Candy clay – I shared the recipe in Cupcake Chronicles Newsletter {subscribe here } or you could also use a round candy like Necco Wafers
  • Pupil – brown mini M&M’s
  • Eyelashes – Chocolate Jimmie sprinkles

Instructions

  1. Carefully take apart cookie
  2. Melt chocolate and dip end of lollipop stick in chocolate and place in frosting on cookie, replace top of cookie
  3. Place on wax paper and place in freezer for at least 15 minutes
  4. Roll out candy clay and cut with a decorator tip, add to cookie with a little frosting or add round candy
  5. Add a little frosting to the middle and then the brown M&M
  6. Add Jimmies for eyelashes
  7. Place in freezer to set, about 15 minutes

I cut the tags from Lifestyle Crafts die cuts, added a heart cut from die cuts like I used on the Heart Garland, and tied them onto the stick with a ribbon.

Baking 101: Cookie Dough Truffles for Valentine’s Day

I have been so busy lately, I haven’t had a chance to add to my Baking 101 series, I apologize. I decided that since it was Chocolate Week here, it would be fun to share a short video with you about what else…CHOCOLATE!

And of course, Cookie Dough Truffles too! I first made these little gems at Christmas time this year, and again to take to the New Years Eve Party we attended. Each time I make them, they are gobbled up quickly!

Cookie Dough Truffles

Homemade Cookie Dough Truffles are a fun gift to make and give… recipe at HoosierHomemade.com.

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla
  • 2 cups flour, all purpose
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup mini chocolate chips (note below)
  • 1/2 cup walnuts, chopped (optional)
  • Chocolate Almond Bark or melting chocolate
  • Pink and Red Wilton Candy Melts (optional)
  • Sprinkles (optional)

Instructions

  1. In a large bowl, cream butter and brown sugar until fluffy, beat in vanilla.
  2. Gradually add the flour, alternating with the milk.
  3. Stir in chocolate chips and nuts.
  4. Using a cookie dough scoop, drop dough onto waxed paper and place in fridge for about 1 hour.
  5. Remove from fridge and roll into balls.
  6. Place back into fridge for about 1 hour.
  7. Melt Chocolate, dip balls, coating evenly.
  8. Drizzle with melted Pink or Red Chocolate and add sprinkles if desired.
