Mini Rainbow Cupcakes
St. Patrick’s Day wouldn’t be the same without a few Rainbows to celebrate with! And these Rainbow Cupcakes are perfect for Rainbow Week!

Rainbow Cupcakes are not an original idea, and although I’ve been wanting to bake them for a long time, I decided to change it up a little and add my own twist to them.
These cute little Rainbow Cupcakes would not only be a hit for St. Patrick’s Day, but you could also use them for a Rainbow Birthday, a Tie Dye Party or even a Baby Shower.
Baking them is pretty straight forward, but it does take some time and a few supplies that you may not have on hand.
Prepare cake mix or other cake recipe. Divide batter into 6 bowls and add coloring to each bowl. I added about 1 cup of batter for the Red, and then a little less for each color..
Add 1 tablespoon of batter to each cupcake liner Bake at 350 degrees for about 10 minutes or until a toothpick inserted comes out clean.
To assemble the Rainbow you will need…
- Red – 20 cupcakes
- Orange – 17 cupcakes
- Yellow – 14 cupcakes
- Green – 11 cupcakes
- Blue – 8 cupcakes
- Purple – 6 cupcakes
I have found to get the most vibrant color, it’s best to use gel paste to color the batter.
To decorate…
Fit a decorator bag with a giant round tip, add the frosting to the bag. Pipe on a small amount of Buttercream Frosting and immediately add colored sugar.

Your cupcakes and everything else are so gorgeous. I look forward to you daily. I need a source for plain white cupcake liners that are not grease proof. I can’t find them anywhere. Wilton liners don’t sit nicely in my cupcake pan and cause a bulge on the side. (for want of a better way to describe) They look as though they are 2 pleats too large. Why do all papers now come grease proof? They separate from the cupcake after they are baked resulting in an unsightly presentation. Are we supposed to double line cupcakes? I will be making 2 dozen cupcakes for our grandson’s party in a few weeks and I want these dinosaur cupcakes to look awesome. Any suggestions, Liz? I would appreciate it.

Thanks so much, I’m thrilled you like HH! I have a couple suggestions for you.
I buy plain white liners that are made by Reynolds, I “believe” that are not grease proof. I buy them at GFC, a food supply company, and they come 500 in a box. You may also be able to find a small container at Walmart.
As for the liner pleating, I used to have trouble with that as well. And then realized that the Wilton cupcake liners don’t really fit in the standard muffin tin. I bought a Wilton cupcake pan and it has helped a TON!

Gorgeous rainbow, lovely idea and so great for the kids too.
Will have to try and get them making one of these at the weekend,… when I have time to clean the kitchen afterwards.
Made them last night for a family party they were great kids and adults loved them. The best part they were so easy and fun to make.
