Seven Layer Southwestern Salad and Our Menu Plan

Happy Monday! Did you all enjoy your Mother’s Day? I spent my day doing what I love, baking cupcakes, cooking, filming and blogging. As you read this, I’m on my way to the Walmart headquarters in Arkansas for a special cooking demonstration. Look for more on this soon!

This Seven Layer Southwestern Salad is perfect for a make-ahead meal or even to serve at a special luncheon. I like that you can keep it as simple as you want, or add any ingredients that you like.

Seven Layer Southwestern Salad

Quick and easy Seven Layer Southwestern Salad from HoosierHomemade.com

Ingredients

  • 1 1/2 c. Sour Cream
  • 3/4 c. Salsa
  • 1 (15 oz) can Black Beans, drained and rinsed
  • 1 large green bell pepper, diced
  • 2 medium tomatoes, diced
  • 1/2 c. thinly sliced green onions
  • 1 head lettuce, cut up
  • 1 c. shredded cheddar cheese
  • 1 1/2 c. corn chips

Instructions

  1. In small bowl, mix the sour cream and salsa, set aside.
  2. Drain and rinse the beans.
  3. Dice the pepper, tomatoes and onions.
  4. In large bowl or platter, layer, beans, pepper, lettuce, tomatoes and onion.
  5. Spoon sour cream mixture over layers or serve on the side.
  6. Sprinkle with cheese.
  7. Refrigerate until ready to serve.
  8. Add corn chips.

Since I will gone until Wednesday evening, I have some easy to fix meals planned for Doug and the boys.
