We continue our Valentine’s Day celebration today with adorable little Pink Velvet Cupcakes. The ever popular Red Velvet Cupcakes, which are chocolate flavored cupcakes colored red, have been transformed with white chocolate and pink coloring.

I started with the Vanilla Cupcake recipe that I shared last week, and transformed it a bit, adding a box of white chocolate pudding and substituting the sugar with Truvia Baking Blend. And of course, pink coloring to make them pretty and pink for Valentine’s Day!

So cute…let’s get started…

The Pink Velvet Cupcake recipes has very simple ingredients…cake flour, baking soda, baking powder, salt, eggs, buttermilk, oil, and vanilla. And the addition of white chocolate pudding, Truvia Baking Blend and Wilton pink coloring makes a perfect combination.

First you need to beat the eggs, then add the Truvia Baking Blend, remember this is a sugar substitute blend of zero-calorie Truvia natural sweetener and sugar and packaged in a product that’s designed for easy, at-home baking. It also can be substituted for sugar in any recipe by simply using half as much Truvia Baking Blend as you would sugar.

Add the oil and vanilla and mix well

Whisk together the dry ingredients…flour, white chocolate pudding mix, baking soda, baking powder and salt. Add a splash of vinegar to a measuring cup and add milk, let it set a couple minutes to make the buttermilk. Add to the egg mixture, alternating the dry ingredients and the milk.

Mix until well combined.

Add the pink coloring and mix well. Divide into liners and bake at 350 degrees. {Full recipe below}

The cupcake liners are from the Martha Stewart line and I found them at Michael’s. I used Wilton Decorator Icing and a giant star tip for the frosting and various Valentine’s sprinkles.

Yield: 28-30 mini cupcakes or 15 standard cupcakes

Cook Time: 10 minutes

Ingredients

  • 1 1/4 cup cake flour, like Softasilk
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 small box white chocolate pudding, you can also use sugar free
  • 2 eggs, room temp is best
  • 1/3 cup Truvia Baking Blend {or 3/4 cup sugar}
  • 1 1/2 teaspoons vanilla
  • 1/2 cup oil
  • 1/2 cup buttermilk {splash of vinegar in a measuring cup, fill with milk and let set for a couple minutes}
  • 2-3 drops pink coloring

Instructions

  1. Preheat oven to 350 degrees and fill pan with cupcake liners
  2. Whisk together flour, baking powder, soda and salt. Set aside
  3. In a large bowl, beat the eggs, add Truvia and continue beating for about 30 seconds
  4. Add oil and vanilla and beat well
  5. Gradually add dry ingredients alternating with buttermilk, mix well
  6. Add the pink coloring and mix well
  7. Divide into cupcake liners
  8. Bake for 10-15 minutes, depending on the size of cupcake or until a toothpick inserted in the center comes out clean
  9. Cool completely and frost

Notes
