“Oh the weather outside is frightful, but the fire is so delightful. Since we’ve no place to go…” You know the rest of those Dean Martin lyrics right? In fact, it’s probably going through your head now just with those two stanza’s.

That is one of my favorite Holiday songs. There is something about being snowed in at home during a blustery winter storm that brings out the festive spirit in us. Along with that festive spirit comes the desire to bake delicious treats for our families.

Easy Whoopie Pies

Good thing I went to the store before the storm really kicked into gear. I just couldn’t resist a box of Pillsbury Holiday Funfetti Cake Mix, along with matching frosting and sprinkles, too! The box just popped out at me as I was strolling along the baking isle.

The wonderful thing about this cake mix is that, although it makes delicious cake and cupcakes, we aren’t limited to just making those. In fact, I have an idea for something that will have everyone running to the kitchen. I am going to show you how to make delicious easy whoopie pies. All you need is your Pillsbury cake mix and frosting and four easy ingredients – flour, oil, water, and eggs.

Are you ready to get started? Okay, here we go! First you will add the cake mix, flour, oil, water and eggs together into a mixing bowl. Stir to mix well.

Then, using a cookie dough scoop (mine was 2 Tablespoon size) spoon batter onto a greased cookie sheet. I lined my sheet with parchment paper, however you can use a silicone mat as well.

Bake at 350 degrees for 10-12 minutes and cool completely.

When they have cooled, stir the frosting and place in a decorator bag with a large round tip, or simply cut the bag open at the bottom. Pipe the frosting onto the flat side of a cookie and top with another cookie. Dip the edges of the frosting into the holiday sprinkles from the frosting mix.

Is your mouth watering yet? I know mine is!

Easy Whoopie Pies for the Holidays

Just LOOK at this finished product. These Pillsbury Whoopie Pies are spectacular for a snowed in snack. They are also a wonderful dessert at the end of a Holiday meal.

The red, green, and white speckles of the Funfetti peeking out of the cake, as well as the beautiful sprinkles and the green frosting make this a treat that truly stands out above the rest. Serve these with a glass of ice cold, refreshing milk and watch the looks of satisfaction on everyone’s faces as they savor this delicious treat.

Ingredients

  • 1 box (15.25 oz) Pillsbury Holiday Funfetti Cake Mix
  • 1/2 cup flour
  • 1/3 cup oil
  • 1 cup water
  • 3 large eggs
  • 2 tubs (15.6 oz each) Pillsbury Holiday Funfetti Vanilla Frosting

Instructions

  1. Preheat oven to 350 degrees, line cookie sheets with parchment paper or use a silicone mat
  2. In a mixing bowl, add cake mix, pudding, flour, oil, water and eggs. Stir to mix well
  3. Using a cookie dough scoop (mine was 2 Tablespoon size) spoon batter onto a greased cookie sheet
  4. Bake at 350 for 10-12 minutes
  5. Cool completely
  6. When cool, stir frosting and place in a pastry bag with a large round tip, or simply cut the bag open at the bottom
  7. Pipe frosting onto the flat side of a cookie and top with another cookie
  8. Dip edges of frosting into holiday sprinkles from the frosting mix
