Cupcake Tuesday~Easter Egg Cupcakes~Spring Hop Party

Welcome! It’s a two-for-one day! Cupcake Tuesday and Spring Blog Hop!

Yesterday, we started celebrating Spring over at Created by Diane, I shared my Ice Box Dessert, a quick, easy and refreshing, Old Fashioned Dessert, perfect for your Easter celebration or even just because it’s Spring.

It’s no surprise that I love cupcake books, and Hello, Cupcake is one of my very favorites. When I saw their Easter Egg Cupcakes, I just knew I had to give them a try.

I will have to admit, I changed them up a bit to fit my style. Isn’t that what cooking and baking is all about?

I started by baking my favorite Chocolate Cupcakes. Then I set out to tackle the cookies. I used the same recipe I used for the Shamrock Almond Cookies, and the same recipe I borrowed from Bake at 350.

Now, I’ll have to admit, I’m not a cookie decorator, I think, like anything, it takes practice, and well…I usually decorate cupcakes 🙂

I made Royal Icing, again from Bake at 350 (can you tell I love her blog?) and tinted it 4 soft pastel colors. Outlined the cookies…

Then thinned out the icing with a little water, and filled them in. Then I added some more color to brighten up the icing, and also tinted a lavendar.

Then I started decorating. I used several different tips and a few sprinkles to add dimension.

After the cookies were all done, I placed them in frig to chill. Whipped up some bright green Buttercream Frosting and started on the cupcakes. I piped on a single layer of frosting, then using the leaf tip, I added leaves on top. I made the frosting pretty stiff so that it would hold the cookie up.

Notes: A couple hints, after going through my 160 cookie cutters, I was amazed to find out, I didn’t have an egg cutter. So I took a round cutter and just shaped it to make the egg shape. In the Hello, Cupcake book, they use graham crackers and then decorated them, you could very easily use them, and not bother with the sugar cookie cut-outs. Also, in the book, they show the cookie laying flat, which is probably easier than the way I did mine, but well, I didn’t measure my cookie size like I should have, so I had to improvise and stand them up.   3. I am making all of our Easter treats by hand this year. We have chocolate marshmallow eggs, homemade “Peeps”, Peanut butter eggs, jelly bean bark and Easter cookies.

  4. Probably nothing special. My husband and I are retired and we pretty much go for quick and easy on meals. I figure I earned a break after all the years I cooked. My son thought being asked to have cold cereal for breakfast was torture. Hot breakfast every day. Whew, that was a lot of years of cooking.

  7. I am going to be making the little Easter Basket Cupcakes I saw on another site.. They are the most adorable cupcakes.. My kids are older so doing the whole egg hunting and baskets isn’t a major thing anymore..

    Easter falls on our church potluck Sunday, so I am trying to think of something special that I can make and that goes a lot way. Right now I am thinking maybe stuffed mushrooms.
