Seven Layer Southwestern Salad

Earlier this week, I hosted a Pampered Chef Party.  I wanted to keep it light for Spring time, so we had Seven Layer Southwestern Salad and Cheesy Chili Dip. They were both really good, I’m totally addicted to the dip.

Seven Layer Southwestern Salad

  • 1 1/2 c. Sour Cream
  •  3/4 c. Salsa
  • 1 (15 oz) can Black Beans, drained and rinsed
  • 1 large green bell pepper, diced
  • 2 medium tomatoes, diced
  • 1/2 c. thinly sliced green onions
  • 1 head lettuce, cut up
  • 1 c. shredded cheddar cheese
  • 1 1/2 c. corn chips

In small bowl, mix the sour cream and salsa, set aside. Drain and rinse the beans. Dice the pepper, tomatoes and onions. In large bowl, layer, beans, pepper, lettuce, tomatoes and onion. Spoon sour cream mixture over layers. Sprinkle cheese. Refrigerate until ready to serve. Sprinkle with corn chips.

Cheesy Chili Dip

  • 4 oz. cream cheese
  • 1 (15 oz) can chili without beans
  • 1 t. Southwestern Seasoning Mix (Pampered Chef or any taco seasoning)
  • 4 oz. Monterey Jack cheese, shredded
  • 1 garlic clove, pressed
  • 1 small tomato, chopped
  • 1 green onion, thinly sliced (I left these off)
  • 1/4 c. pitted ripe olives, chopped (And these too)
  • Sour Cream, optional

In a medium bowl, combine, chili, cream cheese and seasoning mix. Shred cheese into bowl, mix well.  Press garlic over chili mixture and mix well. Spread over bottom of 8″ Mini-Baker. Bake for 20-25 min. (I doubled the recipe and cooked it in the microwave for 5 min.) Chop tomato, olives and onion, sprinkle over top of chili mixture after baking. Serve with sour cream and torilla chips.

I’m sure most of you are familiar with Pampered Chef and their awesome products. I would like to tell you about one of the new ones. It’s called the Pineapple Wedger.

It looks like a large apple corer, here is my very good friend, Lorrie, who happens to also sell Pampered Chef, demonstrating it.

I was lucky enough to find Pineapples on sale this week at Aldi’s for $.99.   1. Those recipes look great! I’m going to save them AND send the links to my kids and grandkids to enjoy. We have a couple of friends who sell Pampered Chef so I enjoy many of the products in my home. They are definitely great quality! I’ve used them as gifts for grandparents in the past and they all loved them! 🙂

  6. both of those recipes look so good! And I love the pineapple cutter! I am always watching the pineapples every week because I only buy them if they are $2 or less (.99 is a great price, I have never found them that cheap). It looks like there would be less waste using that cutter than the way I ‘butcher’ them

  7. awesome recipes! I wish I could find pineapples for .99 cents because i love them. My favorite new gadget is the pineapple thing that cuts them into perfect rings it makes peeling them so easy!
