Mango Crisp with Almonds
Often times we think of dessert as a sweet treat at the end of the meal. But it doesn’t always have to be full of sugar and bad for us, we can make dessert taste delicious and still be healthy. This Mango Crisp with Almonds is not only packed with flavor, it also has a good source of fiber. In addition to their tasty tropical flavor, mangos are an excellent source of vitamins C and A, both important antioxidant nutrients. Who knew? Mangos are delicious AND good for you!
Right along side of trifles, I think crisps are one of my favorite desserts. They are easy to put together, easy to transport if you are visiting friends or attending a potluck, and they look impressive when you serve them, especially with a big scoop of ice cream on top!
Like most crisps, this Mango Crisp starts with delicious fruit mixed with a little sugar and cinnamon for flavor, and topped with a combination of flour, brown sugar, oats, almonds and melted butter to hold it all together.
Now although I’ve baked my share of cobblers and crisps, I have to be honest, I’ve never baked with Mango, and actually never even tried one before. The nice folks at the National Mango Board sent us a beautiful box full of mangos to try, and I was definitely pleasantly surprised with the flavor. I also had no idea how to pick a ripe Mango, here are a few tips from them…
How do you select the right mango?
- Don’t focus on color. It is not the best indicator of ripeness.
- Squeeze the mango gently. A ripe mango will be slightly soft to the touch.
- A firmer mango would be a good choice if you don’t plan to eat it for several days.
- Use your experience with produce such as peaches or avocados, which also become soft to the touch when ripe.
- Ripe mangos will often have a fruity aroma at their stem ends.

Mango Crisp with Almonds
Mangos are delicious and good for you too! Recipe from HoosierHomemade.com
Ingredients
- 5 cups chopped mangos
- 1/4 cup sugar
- 1 tablespoon cornstarch
- 1 /2 teaspoon cinnamon
- 1 tablespoon lemon juice
- splash of vanilla
- 1/2 cup flour
- 1/4 cup oats, rolled {not quick cooking}
- 1/4 cup almonds, chopped
- 1/2 cup brown sugar
- 1/3 cup butter, melted
- Vanilla Ice Cream, optional
- Cinnamon and Almonds for garnish, optional
Instructions
- Preheat oven to 350 degrees and butter a 8×8 baking dish
- Clean and cut mangos and place in large bowl
- Add lemon juice and vanilla, stir to coat
- In a small bowl, combine the sugar, cornstarch and cinnamon. Add to the mangos and stir to coat. Add mixture to baking dish.
- In a small bowl, combine flour, brown sugar, almonds, and oats. Stir in melted butter until well combined. Sprinkle over mango mixture.
- Bake for 30-45 minutes or until bubbly
- Serve with Ice Cream, sprinkle with a pinch of cinnamon and almonds if you like
