Patriotic Pie Squares

Memorial Day is almost upon us and before we turn around Fourth of July will be here too! Are you hosting a Cook-Out or maybe heading to a Potluck? I have a fun, easy dessert for you to whip up…Patriotic Pie Squares.

When I first spotted the Berry-Lemon Cheesecake Squares over at Pillsbury, I thought they would be perfect to add to our Memorial Day Cook-Out, however…we really aren’t crazy about cheesecake, so I switched them up to fit our taste.

We loved them, but the best part is you can bake the pie crust ahead of time, cut the fruit and in minutes you can put together these Patriotic Pie Squares to enjoy at your get-together.

Yield: 20-30 squares depending on size of cookie cutter
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Make these Patriotic Pie Squares for your next get-together, they go together quickly and can be made ahead of time. Recipe from HoosierHomemade.com. Adapted from Pillsbury

Ingredients

  • 1 box Pie Crust {or make your own}
  • Milk and Sugar for brushing on pie crust
  • Fresh fruit - strawberries, blackberries and blueberries
  • 1-2 teaspoons lemon juice
  • 1 small box instant vanilla pudding + milk
  • 1 tub COOL WHIP Whipped Topping {you won't use it all}

Special Tools needed

  • Square and Mini Star Cookie Cutters

Instructions

  1. Preheat oven to 375 degrees
  2. Remove pie crust from box and roll out with rolling pin,cut with a square cookie cutter and cut 2 stars for each square
  3. Place on cookie sheet sprayed with non-stick cooking spray {NOTE: the stars won't take as long as the squares, so either bake on separate sheet or watch them closely and remove early}
  4. Brush each square with milk and sprinkle with sugar
  5. Bake squares for about 7-8 minutes or until golden brown - Bake stars about 3-5 minutes
  6. Let cool
  7. Mix pudding and milk and place in fridge to set about 5 minutes
  8. Cut the strawberries and place in small bowl with blueberries and blackberries
  9. Add lemon juice and toss to coat

Assembly

  1. To each square, add a spoonful of pudding, then a large spoonful of COOL WHIP, add the stars and fruit

Notes

Liz says...these can be changed up to fit your taste, simply add a different pudding flavor. I think next time I will mix the pudding in with the Cool Whip.
