Sometimes there isn’t enough minutes in the day, I think we all have those days where there are a million things to do and it seems like nothing gets done. We all love to spend time making fancy desserts, you know I love to bake, but it’s always good to have an easy dessert that can be put together in minutes. The kids have a game, or you have a meeting…and suddenly the neighbor calls and wants to drop over for some coffee and dessert…yikes!

And with Mother’s Day this weekend, you know Dad and the kiddos would love to make you something special. With just three ingredients…this Easy Strawberry Shortcake is perfect for those last minute {or dessert challenged, like hubby} surprises!
Pound Cake…Strawberries…and COOL WHIP Whipped Topping…that’s it! Told you it was easy!
Easy Strawberry Shortcake Directions:
- Remove Pound Cake from the freezer and let set out on the counter about 10 minutes
- Meanwhile, clean and slice strawberries
- Slice cake and cut into small chunks
- Layer cake, COOL WHIP and strawberries in a pretty glass {I bought these at Walmart for under $2}
- Top with a dollop of COOL WHIP and a whole strawberry
