I love a big brunch on the weekends, but I also like to wake up slowly and not spend hours cooking! These Rosemary Parmesan Potatoes are the best of both worlds!
There are a lot of great things about having older kids- and one of them is definitely sleeping in on the weekends! The boys usually sleep in later than I do, which gives me a few hours to myself in the mornings! I have started making these Rosemary Parmesan Potatoes -they feel super fancy but take only a few minutes to prepare! They feel like Mom slaved in the kitchen, while Mom feels rested- win win!
To prepare, all you need to do is cut the pepper and onions.
Then, combine them with the Simply Potatoes Diced Potatoes, rosemary, chili powder, paprika, salt, garlic, and half of your parmesan cheese.
Finally, pour the mixture into a baking dish and bake on 375 for 35 minutes. Easy- and the flavors- especially the rosemary- take it up a notch!
My secret weapon for breakfast? Simply Potatoes® Diced Potatoes . They are found in the refrigerator section- because the potatoes are never frozen it makes them so tasty. Plus, my dish cooks quicker because nothing is frozen. I love products that make my life easier- without sacrificing quality.
When you take it out of the oven, top the dish with the remaining parmesan cheese and it is ready to serve! Usually I will cut up some fruit, but if we are celebrating I might make eggs or pancakes!
I always find that when I spend the time to make something a little more fancy, the boys linger around the table longer, we chat a little longer, and our day goes a little better.
This recipe would also be great for Easter brunch- a little be fancy, but super easy! If you use a Simply Potatoes dish, be sure to use the #SimplyHolidays tag!
What is your favorite thing about the stage your kids are in? Are you a big brunch person? Or do you prefer breakfast and lunch? I love brunch- less dishes!
Simply Potatoes is giving one lucky reader a Le Creuset Stoneware Square Dish!
