Rosemary Parmesan Potatoes
I love a big brunch on the weekends, but I also like to wake up slowly and not spend hours cooking! These Rosemary Parmesan Potatoes are the best of both worlds!
There are a lot of great things about having older kids- and one of them is definitely sleeping in on the weekends! The boys usually sleep in later than I do, which gives me a few hours to myself in the mornings! I have started making these Rosemary Parmesan Potatoes -they feel super fancy but take only a few minutes to prepare! They feel like Mom slaved in the kitchen, while Mom feels rested- win win!
To prepare, all you need to do is cut the pepper and onions.
Then, combine them with the Simply Potatoes Diced Potatoes, rosemary, chili powder, paprika, salt, garlic, and half of your parmesan cheese.
Finally, pour the mixture into a baking dish and bake on 375 for 35 minutes. Easy- and the flavors- especially the rosemary- take it up a notch!

Rosemary Parmesan Potatoes- a great recipe for brunch!
Ingredients
- 1 package Simply Potatoes diced potatoes
- 1/2 diced bell pepper
- 1/2 diced white onion
- 1-2 sprigs of fresh rosemary
- 1 tbsp chili powder
- 1 tsp smoked paprika
- pinch of salt
- 1 tsp garlic powder
- 1/3 cup parmesan cheese
Instructions
- Cut pepper and onions, then combine in a large bowl with potatoes, rosemary, chili powder, paprika, salt, garlic, and half of your parmesan cheese.
- Pour into a baking dish and bake on 375 for 35 minutes.
- When fully cooked, sprinkle remaining parmesan on top and serve.
