By June 1, 2011Cooking, Side Dishes

Quick and easy dinners are a must in our house during the Summer. But, sometimes keeping it healthy is a challenge. Last night we enjoyed a healthy, quick and easy dinner.

Teriyaki Chicken and Broccoli

Holland House carries a wide variety of wines and vinegars for Everyday Cooking. I marinated the chicken in World Harbor Teriyaki Sauce {recipe soon} and while Doug was grilling it up on our new grill, I prepared the Broccoli.

Quick and Easy Broccoli with Holland House Vinegar

  • Yield: 4-8 servings

  • 2 to 4 cups broccoli florets
  • 1/2 cup oil {extra virgin olive}
  • 1/4 cup Holland House White Wine Vinegar
  • 2 tablespoons chopped Italian parsley
  • 2 tablespoons chopped basil
  • 2 teaspoons brown sugar, packed
  • 1/2 teaspoon kosher salt
  • 1 small clove garlic, minced

  1. Cut broccoli and wash.
  2. Steam in microwave or on the stove top with a few tablespoons water.
  3. In a measuring cup, whisk together dressing ingredients until sugar and salt are dissolved.
  4. Drain broccoli and place in bowl.
  5. Drizzle with desired amount of dressing.

The ideas are endless to create a flavorful side dish with Holland House Vinegars. Grab a new recipe or visit their Facebook page for more information on Everyday Cooking.
